Still lovely but not as full or long as DeVenoge 95 tasted at same event. No fruit remaining, but wouldn't really expect, and wouldn't hold it much longer.

Bought on auction recently. Bottle and cork in good condition. Medium yellow gold, with light, fine perlage. Citrus, apple, tangerine, almond paste, hazelnut, toast, brioche, and smoke, with fresh acidity, and great persistence. The mousse is comprised of fine bubbles and very smooth. There is a pleasant light bitterness that adds additional freshness. Good complexity. The champagne benefits from aeration and becomes more and more harmonious as time passes. I did not expect the 1995 to e so youthful and fresh. Well-kept bottles, I particular magnums, should continue to drink well for another ten years. A very good vintage for DP, and a great champagne!

Deep straw yellow color. Caramel apple, pear and roasted nut aromas. Develops honeycomb and dough qualities with air. Mature orchard fruit, caramel and honeycomb flavors. Lovely.

Perfection! 1995 continues to impress on all fronts! This bottle was probably the best DP I've drunk ever. Butter. Toas. Mandarin. Marmelade. Perfect age and still a lively acidity. Everlasting aftertaste. Last bottle but I'm not mourning - better go out with a bottle like this. Perfetction!

Beautiful golden netcar. Nose of toasted wheat, hazelnut, straw and a hint of toffee apple. As elegant a palate as I have ever experienced in Champagne, absolutely still lively and alive with fine perlage. Palate of toasted nuts, fresh brioche, lemon curd. Chalky feel from the acidity giving balance to the citrusy richness. Minute-long finish of yeasty, mushroomy flavours. Stunning - Merry Christmas!

First time having an aged champagne. The color was a big yellow compared to a typical champagne. Lots of secondary flavors. I thought it tasted like an old dry riesling than a nice champagne. Anyways, enjoyed with sushi.

Annual SAC event @ French Consulate (French Consulate in NYC): Youngish on the heels of the 85 but drinking quite well. There's just the hint of age on this one although it's not quite as pronounced as the La Grande Annee right before. Very light and bright.

Dom Perignon P2/P3 Dinner (New York City): Best of the 95 blancs (relative to oenotheque and p2). A wine that wants you to drink it. I am a sucker for those oxidative notes but it had verve so more of a feature than a bug.

DP Extravaganza! (Friend's place): This was fairly evolved although more on the nose. It's more strongly oxidized than I would expect for this year. It drinks better than that though with kindof a sweetness, fresh, and almost a bit more youthful.

- Nose: medium + intense, wide range of aromas; brioche and vanilla accompanied by a beautiful, still amazingly fresh fruit (despite the age!!) of citrus and bananas. Continues with hints of mushrooms and honey. Very nice perlage and the fruit is ripe but not overripe.
- Palate: Medium alcohol, medium body and high acidity. In the mouth the flavours spread beautifully with still enough pressure. Has a creamy mousse. The nicely present acidity and preserved fruit make for a very nice drinking experience (awesome drinking flow!). Also the length (medium +) is absolutely top.
- Compared to the tasted 2008, this one is clearly fresher, more filigree and not as opulent.

The ‘95 is losing steam. Quite nice on the pour but the bubbles died within 10 minutes and the flavor flattened out and became simpler. Nice state of maturity on the palate with pumpernickel and caraway. Too bad it didn’t last.

Amazing! The cork had dried out a little bit, so lost some bubbles, but amazing flavors and lovely creamy mouthfeel. Such a special gift from our friends, the vintage was our wedding year.

A gift from my daughter’s boyfriend—I think he is a keeper ;-) Fantastic bottle, bubbles still present and fine, lovely pear and tropical fruit notes with buttered toast and a long finish. I would have liked to see how it evolved with even more air, but it didn’t last long!
There are good bottles and there are great bottles, this one was just GREAT, probably as good as this will ever show. I have long loved this edition but this most certainly was the best showing. In such a drop dead gorgeous spot. The nose so deep with some reduction and initial funk blowing off to give way to this rich and fat and expansive burnt butter, beurre blanc notes. On the palate so complete too with nutty depth. We were in awe about just how good this was... Champagne doesn't get much better.

Rapidly maturing, the bubbles are starting to fade, the color has taken more of a darker hue and now, you find more sweetness with less acidity. Creamy, lush and nutty with a nice combination of yellow citrus, tropical fruits, apple and honeysuckle, the wine feels as if it has already started gently fading away.

Bottle sourced from Belmont Wine Exchange and kept in Eurocave since 2015. Deep golden color. Very fine bubbles. Carbonation is still there and very persistent (some notes below hint to the fact that carbonation is almost gone in some bottles). Sweet tropical nose of mango but also sweet orange and sea shells. Same sweet fruit on the palate, some density. Nice bright acidity that supports all the exuberant fruit and the more oxidized notes (I served it blind and somebody called it a Bollinger). Extremely long aftertaste. At the end this is a very long champagne that aged magnificently well and that delivers all that is expected from an aged Dom. We had the bottle side-by-side with a Dom 96, which was good, but I have to say that the 1995 was surprisingly more exuberant and more ready to go. This wine, if adequately kept is ready to go and I would not hold on for much longer. At peak right now.

PnP. Nice, but I think its best days have already come and gone. Still, enough freshness and maturity to hold my interest. That said, if this bottle is representative, I'd be drinking these sooner than later. recommended

Hardly any bubbles left unfortunately so rather flat. Taste was well evolved and I second the hints of brioche someone alluded to in a previous comment. However this is on its last legs.

When citrus and spice meet caramel, toast, hazelnut and autumn leaves this is the result, as only Dom Pérignon can do. Very evolved, deeply flavorful and fragrant; no it can’t improve but it’s full of life and energy. Even the texture seems thicker and richer than younger versions, even the ‘96 version. Simply fabulous, similar to the ‘90 and why you should be patient with your 2008.

SLDS July 2020 - Re-United: Cumquat, slate and some mushroom and cocoa aromas. There is some fresh acid on the palate, but the fruit also feels rather flat. Probably isn't quite right, maybe storage or some cork issue.

Dynamite showing from a pristine bottle (original disgorgement). This shows a light-gold color and still has vigorous fizz. Intense nose of fruit and a faint nuttiness, and the palate explodes with yellow fruit framed by subtle mushroom and coffee notes. Very deep and in a nice spot in its life-cycle -- this is deep without being quite mature. Still has some improvement but it's in a great place now.

Just love how this is showing. After a lot of bottles in "isolation" (too busy to post) this is clearly the stand out. From first pop the nose and palate deliver and remind you what a great wine should be about. Richness galore - macadamia nuts pan fried in butter - but then so much acidic cut and this toast on the nose lingering. Yeah - it all works and to me a very complete experience today. Really in love with this today. Drink now (at beginning of its long peak) until 2040. Glad I popped this for my second son's first birthday. Delivers big time A great great Dom.

流沙包: "It's like the promise of a Belgian waffle fulfilled" (Chicago, IL): From a bottle that was known to not have been stored well. But this bottle did indeed survive, and it ended up showing like a pretty classic bottle of Dom with those developed old funky reductive notes. Fairly mushroomy and nutty, with a pronounced autolytic character too. A hint sweet and quite browned. Better than drinkable, but not to my taste. With a lot of air, a little bit of something resembling TCA started to emerge, but I wonder if this was more of those aged reductive notes than anything.

DP, DPR, DPO, DPP2 (Ft. Lauderdale, Florida): The group seems to have picked this as their favorite Dom Pérignon of the tasting but I was not quite as impressed. Nevertheless it’s very fine and beautifully balanced. A bit of age shows yet it’s fresh and energetic. The years have tamed the bubbles some but they are tiny and plentiful. Even if you prefer your champagne young you can enjoy this middle aged version.

Wine Tasting Group - Champagne, sorta - Nov. 9, 2019 (Brian's place): Bummer. Funky nose with little fruit. Intermittently, some mild corky aromas emerged with more air. Palate was also funky and muted. Definitely and off- bottle and probably corked that manifested itself as funky and muted nose and palate.

Hello old friend... I had this champagne the first time ~2004 shortly after it was released. Back then I was still a student and my good buddy ordered this off a list at a bar and I brought in a bottle of my birth vintage 1983 to put alongside. Back then it was lovely and young (as were we ;-), well young at least we were)... and the 83 alongside was drinking in a sweet spot. Since then I have actually not encountered the 95 for 15 years until last month when we had the standard and Oenoteque Dom blind at our blind 95 champagne evening, neither of which showed as a good bottle unfortunately. So time to take a bottle of this to La Trompette on a Sunday for BYO with the wife and check in on it. Fingers crossed for a good bottle (appearance and fill were perfect) and it was. At first a bit of funk on the nose which took 5 minutes to blow off. Golden developed vibrant colour, bit murky, few fine bubbles. Some smoke, mineral, slightly reductive on the nose where I really loved this reduction. Palate expansive broad like GC white Burg, focused, honeysuckle, lime, slightly honeyed. Smooth and long finish. In an interesting twilight between young and developed right now. A lovely bottle with the tasting menu throughout. Got better and better as it warmed and drew air. Based on this bottle pretty great today with potential to get even better as caramel nuances may emerge over the next 5-10 years. One to watch for sure. Question is now that I got reacquainted with this old friend how long my last two bottles will last to testify to my prediction. Drink now-2040.

1995 Vintage Champagne horizontal (Medlar (London)): My only word in my notes on this was "odd". Somehow the nose and palate didn't work together. I still enjoyed it but it wasn't a clean bottle. Others agreed. 91-92? It's Dom so 92 it is. But surely there must be better bottles.

Finally, a mag that was approaching drinkability! This was everything you would hope it would be. Pale yellow colour. Very redolent of the 95 oeno with plenty of salinity and cold, rolled steel on the nose and palate. Elegant and poised with great length on the palate. Plenty of lighter coloured fruits.

Courtesy of tlv. Nice mature color with a medium mousse. Notes of caramel and pear give way to apple, honeycomb and toasted nuts. Fine bead. Fuji apple, dried ginger and roasted almond with a subtle sherry/nutty undertone. For me this is at the tail end of peak maturity- just enough of that sherry note to add another element but not so prominent that it detracts from the overall experience. I'll put our lone bottle in the queue to be enjoyed this year. 94+ pts.

This has most definitely entered a mature plateau, with nose and palate tending toward toast, lees, caramel/treacle although there was still a streak of acidity and the wine hung together beautifully. Minimal bubbles - mousse very restrained - this was possibly closer to drinking a Grand Cru Burg (was served in wine glasses rather than champagne flutes). Long length.
Exceptional wine (sadly my second and final bottle) but would most definitely buy again.

This can be a great wine but I've had mixed bottles lately. This one had some great elements: there's acid, darkening citrus fruits, and a middle-aged weightiness and softened mousse. The pieces never really came together though. There's an astringency and emptiness to the finish that I thought air might help, but it never really did, which leaves this anticlimactic.

Cappellano and Lynch (Chicago, IL): At least it wasn't heinously corked like the last bottle. A fairly disappointing Dom, this seemed to be quite angular and disjointed. There was a moderate amount of breadiness, as well as some bits of slightly browned apple. The palate has the right amount of acid, but it doesn't seem to integrate with the rest of the characteristics. Moreover, the finish comes off with a slight bit of bitterness and astringency. Not sure if this is entirely representative, but this was certainly a little underwhelming.

Leiden spring dinner: A tiny bit corked after opening, very balanced champagne, fresh, crisp, vibrant, citric, mineral. After some time the cork tones increased and the wine became undrinkable. I already had several corked top champagnes from the nineties, was there a cork problem in these years?

Gott.

Champagne Showdown: 1995 v. 1996 (Atera): Saline and oyster shell nose that blows over into lemon citrus and some bready notes. Crisp palate, yeasty, yellow apple, pleasant citrus, good acid. A ways off of the '96, but certainly enjoyable drinking.

Vibrant, chalky aromas and texture. Bits of buttery orchard fruits, big emphasis on the apple notes. Tense on the midpalate with good acidity but seems to spread out in width over an hour plus of air time. Good line of acidity and minerality that make this so drinkable and I would imagine, long lived. Elegant!

As expected, the '95 is on a faster evolutionary track than the '96. This vintage is in its early maturity phase, moderately deep and flavorful. Sound acids, good structure. Just lacks a certain flair for outstanding. If we are lucky, it will develop along the lines of the superb 1985.

Nose: The nose is impeccably balanced with biscuits, red apples, almond paste, quince, pears, warm dough, and lemon curd. There is excellent depth and layering that shows off with the age on this.
Taste: Full bodied with medium+ acidity. The acidity is binding and crisp that provides a spine to the palate along with warm dough, lemon curd, red apples, quince, and almond paste.
Overall: This bottle was in splendid condition. This shows off maturity while still possessing a freshness to the tones and palate.

Opened 3 hours before serving but needed more time in this (magnum) format. Some creamy coffee and curry powder on the nose but the palate was dry and tight. Saved half a glass until the end of the meal and it was more relaxed on the palate by then. I'll leave the rest of my mags at least another five years.

Double magnum - cork easy and great shape. Effervescent citrus mist, green apple, and wet sand stone mist on the nose. Straw color w/fine bubbles, more refined zest than mousse, with traces of 95's honey ribbon. Nearly perfect acidic balance of this bottle underpins its precision, and tells of a long life ahead. Drinking fabulously.

Deep yellow color, almost marigold in tint. The reserved effervescence quickly provides a creamy quaff that shows off lemon and green apple crispness and is built on a consistent honey base. The end has the quality of the skin of a walnut.... and a tear that the bottle.. she is... fini.

Celebrating at the Montage Laguna Beach; 12/16/2016-12/19/2016 (Laguna Beach, CA): Medium golden and beautifully complex, the '95 Dom still has a moderately brisk bead which frames aromas and flavors of nutmeg, baked apples, brioche, almonds and butterscotch. Medium-bodied, vibrant and solid in the middle, it captivates all the way from the start through the lengthy finish. No need to wait on this one, as it is delicious and likely at its apex. Well-cellared bottles should provide pleasure for at least another 3-4 years. Drink now-2020.

Opened this to celebrate the end of the Castro era. Toasted freedom and all of the people who have died at his brutal totalitarian hand. Unfortunately - or, appropriately - it tasted old and decrepit and past its prime. Good riddance. Dinner at Ming San's (Ming San's): A superb Champagne - this absolutely entranced me. As good as the 1995 Charles Heidsick Blanc des Millenaires that came alongside was, this completely blew it out of the water. The nose was a little tight at first, but then opened up beautifully into layers of nuts and biscuit, exotic spice and savoury mushroomy umami, and then little shavings of fruit zest - an altogether richer, more assertive nose than the earlier wine. The palate was at once rich and dense, but also showed plenty of finesse, with a laser-liked precision guiding its powerful core of white fruit, mineral and lemon zest - almost like a solid beam of flavours moving through the wine's tightly coiled centre, through the midpalate and out into a long minerally finish. The fine mousse has lost some of its youthful vigour and the acidity, though fresh, is now less obvious, but there was still lots of buried energy and intensity here which only slowly opened up through the evening. This was something else: strength, power and grace, all wrapped up in a still very tight package. Very fine in its own way, but certainly a world away from the elegant, lacy Charles Heidsick. This bottle was very youthful and probably could have done with another 3-4 years, but what a showing even then.

A very distinctive nose and flavor profile - rich, full, nutty with a touch of oak, dry but not excessively so, multi-layered in its flavors and persistent in its length. At twenty years old, fully developed, the edges burnished and the patina of its golden color resonant in the glass. Very delicious, a wine for the ages and a special occasion, which this was.

Food: Chinese Duration: 2 hours Condition: Perfect Aroma: chestnut, cream, sugar cane Note: popped and drank right away. Lovely rich, creamy mouthfeel. Distinct apple notes, with a touch of sweetness that made us think of candy apples. Also a hint of melon. Long finish. Purchased in 1999, stored in all kinds of conditions since then, but unhurt.
"Fairwell Summer, Welcome Autumn" Wine Cellar & Al Fresco Dinner Party (La Jolla, California): Medium-to-deep golden and still sporting a brisk tiny bead, this Champagne has developed significant complexity as it has matured. The nose shows notes of nutmeg, kiwi, brioche, almonds and baked apples. Medium-bodied and vibrant on the palate, it presents similar flavors in a crisply acidic frame. Solid in the middle and long on the finish, this is an outstanding Dom which (assuming well-cellared) should continue to drink nicely for another 5-7 years. Drink now-2020.

Thin appley fruit and lime zest on the nose initially with apricots emerging after a while. But rather quiet. Dry and medium bodied with dosage evident. Creamy smooth moussé and the palate is rather elegantly proportioned and lively. Almonds and milk chocolate. Long aftertaste. After a rather reticent nose the palate was surprisingly open and nice. But the bottle in popped open in May was far superior and complete.

Prestige Champagne tasting with Munskänkarna - blanc de blancs and 1995s (Stockholm): Clearly toasted nose, slightly perfumed, some peach, yellow apple, rather ripe fruit, winter apples, mushroom, definitely mature notes and some elegance. Palate with mineral, almost a fizzy tablet-like impression, high acidity, yellow apple, strong citrus notes. Aftertaste with grapefruit and mineral. Developed and definitely elegant.
It wasn’t really too powerful next to the other wines, but it showed the fine minerality and balance that is usually found in Dom Pérignon from better vintages. On the palate I actually found some similarities to the 2002, while the nose showed quite developed and mature notes, and I liked that combination. Most developed character in this flight, and the only one with clearly mushroomy notes.

Los Angeles "Bucket List" Offline (Los Angeles, California): While young, this offered a beautiful balance of fruit, acidity, and effervescence. As Charlie mentioned, the Dom set itself apart from the powerful, oxidative Krug and the tensely acidic, nutty Comtes de Champagne with its roundness.

Nice dinner at a country-side restaurant. Open, ripe, but still lively wine, with fine bubbles, little yeast, a bit sweet, papaya and lemon. Perfect timing to drink this.

MIxed buttery and citrus flavors lead a light to moderate champagne base. Perhaps a touch of pepper or earthy tones. Perhaps I should have drunk the bottle sooner as it lacked a typical Dom punch.

Popped and poured, consumed over approximately 1.5 hours. Light golden colour in the glass, still showing vigorous micro bubbles. An intoxicating Champagne nose of lemon zest, slate, yeast, light florals, light mushroom, caramelized sugar, toasted hazelnuts, fresh grated ginger and coffee grinds. On the palate, very crisp, yet intense and rich, showing a strong acid profile, with a long finish that just lingers in the mouth, framed by notes of citrus, mineral, burnt sugar and a touch of coffee on the backend. Different than the bottle consumed in August, but for me, provided a similar level of enjoyment. I'm certain this could still go a number of years, however, this is in it's sweet spot for my tastes.

Splendid developed nose offering all kinds of ripe apple and fresh citrus. And then a powerful bang of roasted nuts and oystershells. There is elegance and power in perfect balance! Broad, fullish, very rich palate. Very evident roasted nut-character. Very dry taste with a lot of dark chocolate, and a extremely good grip and length. Lime and hazelnuts. The finish goes on and on... Tasted blind, this was so acidic that the group guessed on Salon. We wandered around on Winston Churchill and other champagnes that combines power and elegance, but no one had Dom Perignon on their mind. We associate that with a more vulgar style - but this was so much better.

Saturday Night Tasting: Popped and poured, light gold colour in the class, still showing lots of vigor. On the nose, lightly bruised apple, hazelnut, caramel, yeast, bread dough, earth, mushroom and lemon zest. On the palate, apple, pear, caramel, transitioning to that earthy truffle note on the mid-palate, to a long finish framed by a slight bitterness, akin to walnut skin. This is in an excellent spot right now.

Wine Dinner at Providence; 7/30/2012-7/31/2012 (Providence): Medium gold color; nose of tree fruit, sour dough bread and canned tuna fish oil (very prominent); powerful mouth--rich, structured, good balance, fine bubbles with exceptional weight on the palate. This was superb and enjoyed it with sashimi, but preferred to sip it alone. Drinking very well right now.

When I heard that one of the other attendees was going to bring a bottle of 1996 Dom, I thought it would be fun to do a little mini-vertical, so I grabbed this bottle of ’95. Great idea, right? Not as well regarded as the ’96 (which is seen by many as the best vintage in recent memory), but no slouch. Unless it is CORKED of course. Ugh. Last time I was at Studio Kitchen, my champagne was corked. Once is a fluke, twice is a trend. Yeesh.
A nose of sweet citrus and bubbles, light straw in color. A light to medium bodied Champagne, with apple, light lemon, and minerals, good acidity. Had for NYE, not a big bubbly drinker but this was good.

This is really fruit forward, not quite what I'd expect from Dom. Pretty sweet with lots of pear and white fruit on the palate. There's even a little vanilla on the edge, which adds to its heft. The finish is nice and, as I would expect from Dom, delicate tiny bubbles give this a great texture. There is PLENTY of life left in this vintage and it may improve as the fruit mellows a bit.

While this year doesn't approach the brilliance of the 1996 vintage, it was still pretty damned good in its own right. Paired nicely with lobster bisque starter, then sirloin topped with lobster chunks & bernaise. It was singing its best tune on final sip..

Soft mousse, copper-tinted platina colour. Starts off with a wall of brioche, straight from the baker's hot tray, then revealing butter, sour cream. Follows through with heady lily flower perfume, vanilla, and some yellow fruit. Full bodied in the mouth, fantastic acidity against pure lemon fruit, and a long mineral finish. A lot bigger than I expected, a real heavyweight dominated by citrus and minerals. Expressing vintage and very different to the last two I had recently ('98 and '02). Maybe, just maybe, lacking one or two layers to make it extraordinarily great but undoubtedly a serious DP, imposing, regal in its confidence. Drinks perfectly now.

Plenty of gentle fizz left when pouring. It poured like a 2 year old bottle of NV which showed it had been well stored. Colour was still pale gold with no hint of oxidisation or caramelisation. Lovely, fruit driven nose. On the palate, in perfect balance and still creamy with just the right backbone of acidity. Not too biscuity and the expected apples and toasty notes. In its perfect drinking window and reminds me what good vintage champagne should be about.

Sampled 2/7/11. It's been over a year since my last bottle. The wine has added some creaminess it did not have before. Still granny smith apple, some citrus and straw elements along with a nice acidity at mid palate. It certainliy has rounded out to great form and is at peak now.

At 1/10 dinner tasting with many fine reds and this. Wonderfully expressive and ready to drink now. Not quite the burnt toasty palate of a 20+ year old great, but truly integrated. Creamy nose and viscous palate with lievley bubbles, pointed fruit flavors and very full finish. The lemony, grapefruit, quince flavors mixed well wtitout any dominance. Among DP's a fine choice.

Second and last bottle in a month. Once again a paradigmatic DP with amazing precision and a restrained floral nose and perfectly blended palate of citrus, toast, yeast and mild fruit. Not as overpoweringly great as the 85, for example, but ready to drink and just delicious.

Poached pears, smoke and white pepper on the nose, still clipped across the palate in comparison to the 1983 we consumed alongside it, and to my mind less fully developed than the 95 Enchanteleurs. On the palate only some hints of coffee in the background together with yellow fruits. Very good, the materials are there and I suspect this will be great in time. Three more left, off to storage they go.

Very nice balance with baked bread notes and stone fruits on the palate. Good acidity and plenty of life left in this bottle...but I've had growers that were this good or better for far less. With this wine it's becomming more about status and symbolim than quality. I opened this to help some friends celebrate their wedding...I can think of few times better to celebrate than something as special as a wedding.

Almonds, wheat toast, lemon and tangerine nose. Peach layered over plum and ribbon of honey with some tangerine running throught it all, framed by light citrus. The acidity pulls it together and accentuates the fruit. This harmony should last for years. Simply delicious - 96

Took this to the restaurant two weeks ahead of a celebratory lunch with our parents. Served impeccably as an aperitif by the excellent sommelier. Bottle age was evident from the darkish yellow, but a tight mousse and a real sparkle in the flute. Nose of orchard fruit, baked apple, a little oxidised (in a good way). Great mouthfeel, really classy palate of more apple and toasty finish, but not overpowering. Could easily handle food although we only troubled it with a beetroot and foie gras macaroon amuse bouche. If anything, this was even better than the bottle we had in April and I am now searching out a 96 to try, as I have been told it is even better, which is difficult to imagine!
Smuggled this into the suitcase for our engagement weekend in Provence. Bit grubby under the foil but the very long cork came out smoothly and cleanly. Not at all musty on opening. Quite dark due to reasonable bottle age. Small bubbles, tight foam. Nose had a caramel Note and apple. In the mouth the wine was delicious with toasty brioche, citrus and a very long and pleasant finish. Really pleased the wine was in good condition as there was no back-up bottle to hand! Champagne of this quality is the perfect drink for moments like these and it didn't let me down.

This is drinking very well right now. Citrus, banana, and bread on the nose. Hints of yeast, citrus, and wintergreen on the palate. Smooth, long finish. Good acid, nicely balanced, with small bubbles. This will probably hold up nicely for a few more years, but I'd drink now if I had more.

A world away from the enamel-stripping harshness of NV champagne, even from the big names. Wonderfully smooth, creamy and full-flavoured - great with food but still fresh enough to enjoy as an aperitif. Shame it's so expensive...

Aureole with Peter Michael, CC, DP, Caymus, Sloan, Colgin and more (Aureole, New York, NY): Thank heaven for back up bottles! This was fantastic. Light bread-y notes, citrus (lemon, predominately), great mouthfeel. I had this twice in July, and liked it, but in the company of other big Champagnes and it didn't stand up as well to them. On its own this night, it was a star. Very nice.

Drank alongside the 1996 and 1998 vintages of Dom. Off-pale straw hue, fine bead in glass. Classic and regal on the nose, with forward aromas of biscuit, faint hint of stone fruits, and a touch of yeast. Medium body. On the palate, the class and refinement of this great label continues to show itself through flavors of toast, hazelnut, and notes of citrus rind. Plus acidity keeps everything in sharp focus on the long finish. Simply delicious Champagne.

The upside seamless and so amazingly pleasant; maybe the most pleasant bottle of bubbly I've ever had -- absolutely nothing wrong with it; the downside, to quibble: not nearly as exciting as past Taittinger, Krug, or Salon tete de cuvees; this bottle was in a very good drinking spot, impossible to dislike and not possible to be wowed

Oenoteque release, disgorged late 2005. Dosage = 6 g/l Medium straw-yellow color and pinpoint bubbles. Great yeasty, vinous aroma of hay, yellow fruit and minerals, adding mocha and biscuity nuances with time. Creamy entry with vanilla, biscuit and a strong citrus grip on the back palate. Mocha and mineral notes emerge as the wine spreads on the palate; the overall impression is one of intensity, vinosity and creaminess. Very long, crisp finish emphasizes a near-ideal balance of mineral and fruit notes.

Tasted semi-blind - I knew it was Dom but not what vintage. Great complexity on the nose and palate - stone fruit, minerals, nuts, yeast, smoke and a touch of vanilla. Young and fresh but with a creamy richness to it. Outstanding length. The complexity suggested an older Dom, but the vibrance and freshness suggested a younger wine so I guessed 93 Oenotheque.

Brought to the Dom Perignon vertical dinner. Tight nose with some green apples, note of oak. Tight austere palate with some creamy apple notes. This was popped and poured and probably should have been allowed to sit open before being served. Someone held their pour for a while and 20 minutes later said it was outstanding.

What a treat! Being the first vintage Champagne I have consumed, I don't have much to compare this to. But that is the point. So much better than the low grade sparklers of the world. I recommend drinking this warmer than you would normally drink Champagne, as the nuances of the bouquet and flavor profile really exploded when the wine warmed up. All in all, this tasted of apricots, nuts and butterscotch. Smooth and elegant, this Dom could easily be drunk prior to a meal or after it. Loved it!

Magnificent Champagne and drinking extremely well now. Sure, you could probably hold on to it for many years to come but I don't see the point in this case. Probably more approachable now compared to the '96 considering the year is not as formidable (still great of course). Wonderful mousse and it's crisp and refreshing on both nose and palate. Comes together beautifully and shows decent complexity.

Foolishly not purchased on release, but rather a recent AMC auction. It's in a rather quiet phase now; just some wheat thins on the nose, full mousse, medium weight, but not too distinctive. But now I know that DP takes its time to fill out, and since the balance is here, I have no doubt this will start climbing the scoring ladder in a few years.

From Magnum in a display of frivolity to open this now, but the occasion was one for decadence. Very tight for the first 30+ minutes with a slightly off putting saline edge. Fortunately the wine exploded and could not have been a better match with oysters. Biscuity notes, lemony citrus, light nuttiness and sweet fruit dominate the wine. Nice complexity. The acid is not too dominate though my teeth seem to disagree. Nice smooth finish. Does not have the raw power of the 96.

Had this one on Christmas Eve and wasn't disappointed. It shows the same great balance and finesse that the '96 does, and with all of the richness and fruit of the '98 to boot. All sorts of tropical fruit can be found here, along with graham cracker and vanilla bean essences that I really like. It lacks the monumental finish that the '96 has, but it beats that wine on every other count in my book. Another near-classic Dom, I think.

A beauty. Perfectly evolved, Chardonnay-dominated, fresh as mountain water, hazelnuts, toasted walnuts, yellow fruit, smooth mousse, great finesse, hint of bitter, lovely length. Not as classy as the 1996, much better than the 1993, not as rich as the 1985, reminds one of the 1988.

Farewell Party for Lisa and Steven: Light, bright straw gold with a plethora of aggressive small bubbles, nicely persistent and lasting longer than my willpower to drink the glass slowly. The nose immediately showed mushroom, brie, and warm apple. With a little time yeast, toast, and butterscotch came out. Butterscotch often means maderisation to me, but not in this case – no signs of that. On entry, the biggest impact was citrus-like acidity and the minute bead. On the midpalate, the wine suddenly turns extremely, indulgently creamy. On the finish, it gives that refreshing scratch of acid and bubble that always makes me crave more. Finish is long and redolent with honeyed dough. Interesting that while this wine is very rich texturally and fairly open on the nose, the palate is still pretty closed. An absolute blast to drink right now, but with acidity and development in the glass that hints at very much more to come. Just a stunningly good wine!

Fuji apple, dried ginger and roasted almond with a subtle sherry/nutty undertone. For me this is at the tail end of peak maturity- just enough of that sherry note to add another element but not so prominent that it detracts from the overall experience.

Gott.

From a bottle that has been standing at room temperature in my in-laws house for the better part of 7 years.
Still plenty of bubbles, crisp apple followed by yeast and mushroom finish that lasts.
Goes to show that quality champagne can withstand improper storage and still be enjoyable and complex.

Food: Chinese
Duration: 2 hours
Condition: Perfect
Aroma: chestnut, cream, sugar cane
Note: popped and drank right away. The 95 DP seems to be in its prime drinking time, fresh enough to cure your thirst and sophisticated enough to give you imagination. Typical DP creaminess and chestnut aromas. This champagne is drinking superbly and much better than some of DPS other vintages in the 90s such as 92 or 99. Aftertaste a bit sweeter than I expected, making a perfect aperitif for Saturday evening!

So well integrated with some minerals tart and sweet fruit along with just enough age to give this regal character

Tasted blind, this was so acidic that the group guessed on Salon. We wandered around on Winston Churchill and other champagnes that combines power and elegance, but no one had Dom Perignon on their mind. We associate that with a more vulgar style - but this was so much better.

Dosage = 6 g/l
Medium straw-yellow color and pinpoint bubbles.
