January 2024 Northern Rhone Dinner: This was a bit of a confusing wine. It seemed a little shut down upon opening, with nothing but a ponderous yellow-fruit profile on the palate. It opened up a little with time and got better, but lacked any hint of salinity and did not feel particularly Chablis-like.

Heidi's Gang: Wind Chill & Frostbite (Maison Margaux, Mpls): Light gold color. Drank a glass over an hour plus. Wow, I love this, apparently more than everyone else. Maybe because this ended up being poured after the trio pf PCYM gems, but I found myself mesmerized by the mineral density on the nose and palate. The nose is filled with fresh mountain air, aromatic oyster shells and parafin followed by lemon and tangerine oil and that brilliant minerality. The palate is so stony, dry extract galore, bitter melon rind (in a good way), lemon, honeycomb, dried white roses, parafin, lemon pith, tart tangerine and a long finish. I'm not fond of pushing these, but I loved the condition and evolution at this stage.

Heidis Group in the Minneapolis "Warehouse District" on a bone chilling night. Same btl as R&Rler. Completely mature & still healthy med-gold color w/ both the nose & palate in nice shape. Fresh seashore & citrus aromas. Serene resolution along w/ finessed; minerality, lemon-lime, orange peel, butter scotch and stone fruit for a lovely autumnal coziness. A very pleasing over-achieving '06 but rarely hitting the greatness of the best vintages. Delighted we caught this in a lovely place given Dauvissat's penchant for pre-mox. Thanks Kevin!

Orange peel, iodine and the white pepper notes typical for Les Clos, here is clearly the density and power of a Grand Cru, but it is not fully convincing, because of the not totally clean notes of the 2006 vintage....

Champagne & Chardonnay WIMPS, September 2022 (La Trompette, London): This bottle showed just why generally, a good match between wine and food can elevate one if not both. When served prior to the course, felt muted, nearly flat? There were stony fruit with plenty of slaty minerals but all wrapped up in a tight ball. The tongue felt as it it was coated in chalk (though in a decent way). After just a bite of the turbot with the creamy mash, the wine starting singing! A fantastic balance of fruits, minerals, body and weight. My favourite still wine and among the top 3 wines I tasted today; from my table as well as samples I got from the others.

Bought on release, perfect fill. Complex, a great foil to freshly-cooked latkes and fatty salmon. Regal. Will probably go at least 20 years. Superb balance, size, depth, persistence. This is the real deal. Does not have the rigorous cut that a young premier Cru has, but has boatloads of sophisticated extract and authoritative flavor set. Woof. 95+

Monday Night Football and Grand Cru (Chicago, IL): I wasn't particularly keen on this; it showed too much of the dirtiness of 2006 here, and the fruit profile felt ballooned and cloying versus the little amounts of acidic/mineral structure that were present here. I'm not convinced this has much complexity either; it just feels like a blowsy, heavy chardonnay.

The nose is not very expressive, on the palate some citrus (more orange peel than lemon), there is saltiness and the typical Clos white pepper, good density and length, but the cut of the better vintages is missing.

Rich golden straw color. Nose of spiced apple and citrus fruits, pink grapefruit, pomelo, and notes of the sea (oyster, saline) and then some floral notes of white flowers and wet soil. Really lovely and vibrant. Palate is rich with white fruit, fresh apple, and citrus notes (lemon, tangerine). Great structure with plenty of acid and full bodied with a soft and full texture, like a velvet. Again notes of the sea, salty sour lemon with tremendous length. In a great place and drinking wonderfully now but feel like it will sustain if not continue to improve over the next 5-10 years. Really excellent.

My last of 4 btls and fantastic tonight at age 14. 2-1/2+ years have passed since my last and tonight's btl may represent the zenith for this vintage of Clos? PnP and slow ox for an hour prior to dinner in btl and Riedel Montrachets. Maturing but healthy medium gold color. Pristine, fresh seashore and citrus aromas. Serene mature resolution along with finessed; minerality, lemon-lime, orange peel, butter scotch and stone fruit for a spectacular autumnal cozy and yet energetic whole. Funny thing was as we were finishing our final pours about 3 hours in this was showing a bit more youthful structure on the final sips. Hanging onto any white Burg past 6yrs can be a roll of the dice but this blt shows how great Grand Cru Chablis can be with appropriate bottle age. 13% alc in a warmer vintage, not bad! Not sure I'd hold on to these any longer but not out fear but rather because this is drinking beautifully. 94+

Super belle bouteille, high fill et bouchon impeccable, pas de premox, jolie couleur tilleul, arômes légers de coquillages, de citron et de calcaire. La bouche offre peu elle aussi, concentration moyenne, creux en milieu de bouchon, douceur, il manque une étincelle. Nettement au-dessous de mes attentes et de son Séchet 2008!

Started off very funky and thought it was corked. It blew off in 30 mins and then a classic Chablis showed through. GC weight and finish. Ended up be great when I originally thought the wine was DOA.

On the nose mushrooms and cheese, on the palate salinity, white pepper, enormous density and good length, during the tasting, the mushroom and cheese notes (luckily) more and more disappeared and the nose became more in line with the taste. Interesting and good, but again not my favorite vintage of Chablis.

French Wine Dinner with NY Wine Friends (The Vine - New York NY): Starts out very rich with ripe apple and pear aromas and flavors. Clearly Grand Cru density from the get go, but this transforms quickly into something more classically Chablis quickly, ending with bright, crunchy, minerally textures. I don't think there is any upside, but this might evolve into something even more complex if it retains enough bright acidity.

From 75cl, perfect cork. Opened but not decanted 45 minutes. Still remarkably pale yellow, no sign of premox. Scent very elusive, so much so we switched to Zalto Burg glasses in the hope of getting more information. Hmm: Occasional waves of citrus, chalk and oak. But we're talking subtle hints. Very pure palate, with an almost glycerine-like thick texture, alas not matched by the concentration or pungency the mouth-feel (and, without wishing to appear vulgar, the price-tag) led me to expect. Short, inexpressive finish for a wine of this class. Evidently an excellent, if closed and inexpressive, Chardonnay, not so evidently Chablis. I guess this bottle would have kept well for another decade, but doubt it would have improved much. 90(-91)P

Ripe apple start-to-finish with very good+ density. Starts out lush and rich in a style atypical for Chablis, but more energy and texture emerges from the middle forward. Very powerful, long finish. This has a long life going forward.

2001 Red Burgundy at Chez Hugo (Chez Hugo, Baltimore): Much more along the curve that the two very fresh younger wines. Some sulfur / reductive notes at first not he nose that blow off, and to be honest give me a sense of comfort nowadays drinking white Burgs. Limestone, briny, some oyster shell, some caramel/ toffee and yellow fruits. On the palate, this is baroque and broad and in need of more acidity. It' full bodied, yet lacking definition: an impactful, direct wine lacking nuance. It's structured, with more of the same fruit on the palate, rich, broad shouldered and powerful, but lacking grace and definition. Impressive, but not very lovable. The ripeness and fatness of the vintage make this a difficult task in spite of great terroir and winemaking skill. It seems further along the maturation curve than I would expect from a 12 year old Dauvissat Clos, but in this case, I think it is the vintage and not Pox. It is drinking as well as it ever will I suspect, and to be fair, this is outstanding in a relative sense, but not what I hope fo rain GC Chablis, much less Dauvissat's. Lovers of rich and dense Chardonnay will like this much more than I.

2001 Red Burgundy Retrospective (Chez Hugo - Baltimore): I participated in a comprehensive white Burgundy tasting upon release of the 06 vintage and thought they were too fat, ripe and lacking acidity. My opinion really hasn’t changed over the years. Medium expressive nose displaying lemon curd, oyster jus, a hint of dirty damp cellar and a hint of limestone. Very good concentration, dense citrus fruit, medium acidity and mineral and a medium long lemon curd driven finish. There is a hint of the 06 bitterness that clips the finish. For my palate, the 06 remains the white vintage to avoid.

Medium yellow. Unlike 4 other bottles, thankfully not corked. More pear and apple than citrus, some musky saline notes. Full bodied, quite glycerine, atypically broad. It tries to make up for what it lacks in acidity through excellent soil. Very good at best and certainly fully mature.

Opened and slow oxed about an hour prior to leaving for the venue. Light gold color. This vintage still strikes me as not up to snuff with other vintages like a recent 07. It always seems a little rounder softer and less complex. A nice Chablis but not the wow Dauvissat often delivers. One left and Ill roll the dice and drink about 3 years from now on its 15th Bday. No signs of premox.

Interesting and ultimately pleasing bottle. When I first opened it, I thought I detected slight cork taint. Let sit for a few hours and the TCA disappeared. The color is a healthy light golden. Nose is all crushed stones and oyster shells. Precise and penetrating yet good weight. Subtle excellence but not a perfect bottle. (92?)

Loved the way this developed. Opened without a decant, but allowed the bottle some air for about an hour before indulging. Started with a piercing citrus acidity and eventually mellowed to allow a nice balance of apple, pear, and eventually a mild honey with a wet sandy undertone. It lasts quite a long time. Very very nice.

Corked. Wow, I see that this is the 4th corked bottle of this I've tried from various sources (with a total of 6 opened), hardly a random event. Caveat emptor. For what it's worth, I've had better luck with the Dauvissat-Camus bottling, although this is just not a great wine however it is labelled.
BTW, going back through CT notes, I seem to be alone in my misery on this one. Either people are just dumping their corked bottles without dropping a note, or this is the worst run of bad luck I've ever had with a particular wine.

Double Blind White Burg (Dauvissat Chablis) (Formentos): Double blind in an 94/03/04/06 flight. Another wow stunner of a nose. So much power and intensity with aromas rich apple, citrus oil, spice and wintergreen mint. Great concentration on the palate. Mature, yet vibrant, white fruit and so much spice, lemon oil and minerality. Long, intense, layered finish. A truly epic Chablis. Wine of the flight, and along with the 05 Forest one of my favorites of the dinner.

Format 375 ml. Nez désagréable à l'ouverture sur la réduction, les coquillages pas frais! Heureusement ça s'améliore ensuite. Malgré le format réduit (demi-bouteille), j'aurais probablement du carafer longtemps.
La bouche est dense et assez fine, fougueuse et complexe, un peu sauvage. Il aurait eu besoin de plus de temps dans le verre ou d'aération, ce que permet difficilement le petit format. Les dernières gorgées étaient excellentes, son rang ayant fini par s'imposer naturellement. 92-93 pts

Even better than previous bottle in March. Short slo-ox, but a bit too cold. Aromas of lemon and mineral. No evidence of premox. Palate dominated by citrus (lemon), minerals, and more pear than apple, all with more than enough acidity to avoid being flabby, and achieve balance. The wine appeared to take on weight as it warmed, and showed some brine and seashell. A fine example of GC Chablis. Should have several years left.

From 75cl, perfect cork. The general trend of CT notes on this wine is that it is very good indeed, but it just isn't Chablis. I disagree. The scent of tangerine (oil, pitch and fruit) is less intense than I'd expect from Dauvissat, but it is perfectly clear. Despite the full-bodied entry and full texture of the mid-palate, only a Chablis could be this limpid, watery (in the most positive sense, think of watered silk) and light. This may be untypical, but it is a truly outstanding wine, a great Chablis and a unique product of its vineyard, the talents of its maker and the vintage 2006. Great now after an hour, and at a cool room temperature. No hurry. 93P

Deep yellow. Pear fruit and some saline aromas. Lush, broad, and shockingly little grip or minerality. It does have some brothiness but simply cannot overcome the tropical nature of this vintage. I find it difficult to muster much enthusiasm for this given its softness and lack of oomph.

Aromas of lemon, mineral, and a hint of tropical(?) begin the journey. No evidence of premox. No decant, but may have benefited from a short one, as the wine took on a bit of weight, and showed brine and seashell with time. Palate dominated by citrus (lemon) and minerals, with more than enough acidity to avoid being flabby, and to extend drink window to at least 2020. Had this alongside the 2006 Wm. Fevre Les Clos which scored higher due to better overall balance.

Took to a small holiday party where a few other Chablis were also present. Again, just as 15 months ago this wine fails to wow me. Still think it lacks a bit of energy and lift. Rounder, softer than it a ought to be. Still, a nice minerality and some docile citrus notes. A nice wine but will it ever be a head turner, I doubt it. Others were more impressed than I, so that's good. No signs of premox and will likely age decently. Maybe its just stubbornly quiet? Pale gold color and clean light floral nose. 2 left. I should wait these last two out a bit. A 2010 Billaud Simon MDT blew it away for me and showed much more classic Chablis typicity.

Great Wine Dinner with Friends (goosefoot - Chicago IL): Lots of ripe apple and pear on nose and palate with modest spice and textures. Very good now. If served blind, I would have thought ripe vintage Burgundy with good weight and density, but certainly would not have thought Chablis.

pale yellow; ever so slightly tropical on the nose, more pineapple & mandarin zest w/some floral qualities, some salt brine faintly in the background; med+ bodied; juicy & almost opulent ripe citrus, red grapefruit (which was perfect w/food), elusive core of salty minerals, acids not up to standard, maybe a little on the flabby side? obviously well-made, absolutely delicious w/dinner; probably should consider remainder in the near term.
Medium yellow. Right out of the bottle, some wood shows and a distant hint of ripe stone fruit. As often happens with Dauvissat, though, it starts metamorphasizing into Chablis with air, subsequently showing more lemony tones and some brine. Still pretty rich and round for this bottling, but the acidity finally turns up late. I'll come back to this later, but for now, I'd summarize by saying that while it avoids the perilously ripe, low acid style of the vintage, it is hardly an inspiring Dauvissat Clos.
Six hours later more floral, still looser than I prefer.

Not wowing me at this point for a Les Clos from Dauvissat. Feels a little flabby and lacking in typical acidity at this point. I'll try another soon to see if a different setting yields a different experience. I have 3 more and don't want to hang onto to these too long if lacking structure.

Lunch au Quartier Général avec Michel et Natacha, Olivier et Jean-Luc (au Quartier Général): Nez réduit, du bord de mer, un peu de fruit jaune. Très bel équilibre en bouche, c'est frais et fin, peu ou pas de bois perceptible, avec une belle longueur et de la minéralité, qui trahit ses origines. Seawater, oyster shell, white peach, stone fruits, salted butter. Very fleshy and lush with soft texture. Very clean with good length. There is some weight, but still manages to be graceful. I would say given the vintage, this may not be a great example either for Clos or the producer.

Intense ripe and lush stone fruit with a charming floral quality. Similarly ripe flavors with a slightly tropical character. Powerful and forward, but perhaps without the focus and precision of Dauvissat les Clos in more classic vintages. I have several bottles and will refrain from trying this again until 2015 or later.

From 75cl, cork of modest quality, stained half-way back, an evidently poor fit for the bottle neck (which flares after the first 1cm). Wine in good condition nonetheless. Youthful light white-yellowish tinge, no signs of premox. Scent, mid-palate and finish dominated by freshly peeled tangerine fruit. Wonderful limpid purity, saline on entry, some mineral vibrancy on the mid-palate (less than expected - perhaps a 2006 thing?) and very soft, even sweet on the tangerine finish. Soft, morbido, limpid, mineralwasser-weich, juicy: underwhelming in the best possible sense. Mature now, will probably - and hopefully - keep and mature further for at least another 5 years. I paid an excessive 79 EUR for this to a rapacious (and very rude) German merchant; for the 2008 and 2009 vintages I managed to find a fairer priced (and much nicer) source. This would be a fair QPR at about 40-50 EUR. 90-92P

Decanted 1 hour on day 1 and while impressive, conversation took precedence and the wine felt good, not great. Vacuvinned overnight. Day 2: the real deal, seashells, straw, grapefruit, granite, rainwater, and almond, chewy and long. A bit shy on the nose but spectacular on the palate. My guess is that this will be glorious 2015-2020.

2011 Simple Series 9: Sean BOD (Imperial Treasure Super Peking Duck @ Paragon): Alcohol :: 13% Opened for 6hrs and decanted for 1.5hrs. This is a little bit steely and sharp compared to both Raveneau. Nevertheless, the aromas is impressive: complex, good depth: gun flint, steely, cold green herbs, ash, mineral, white and yellow floral that the complexity also reflected on the palate that is wonderfully rich and intense. The huge mineral and acid backbone is a little bit sharp however there is enough concentration and ripe fruits to buffer this off and give way to slightly creamy mouth feel that showed sense of class and finesse. The long finished has very good persistent with pineapple, mineral as well as touch of iodine aftertaste. Yet another world class Chablis though this is less refined than the Raveneau could offer. 90-91+

Sean Birthday (Imperial Treasure Super Peking Duck): Built along the lines of total minerality this is definitely a hard-core example from Dauvissat. Essence of rock sums it up well and definitely terroir-driven. Austere in the flavor profile yet fresh and vibrant in terms of the sharp acidity. For masochists only, in which case bump the rating up 5 points.

2011 Simple Series VII: Sean's Birthday (Imperial Treasure Super Peking Duck, Paragon): Better showing than the last bottle I had in Burgundy a few months back, but this was still very good rather than great. It certainly did not help that it was preceded by a quartet of fantastic wines, not least a pair of truly excellent Raveneau Grand Crus. Nevertheless, there was much to praise here. Opened 7 hours before serving, it was certainly a solid Chablis even in its youth. It was definitely a change of gear from the Raveneaus that came before. This had a seriously steely minerality that socked you the moment you stuck your nose in the glass. I liked that though. With bits of spice and dried flowery accents floating over the bed of stony, metally, seashelly mineral, it actually made for a very intriguing, complex bouquet. The palate was very nice too. This had quite a melting, creamy quality to its white fruited flavours. Rich, as one would expect from a Les Clos, especially in 2006, but always laced with more of that lovely mineral picked up on the nose. So minerally in fact that this was almost pure stone and flint as it pulled away into a long finish. With time, some juniper berries, spice and white chocolate notes started emerging. A solid wine, but too young and rather overshadowed by the pair of Raveneaus. I am a lot more sanguine about now than after drinking the last bottle though. One to revisit again, perhaps a decade later. My only worry, as with the last time, is that the wine seemed to lack some of the precision and definition of truly great, age-worthy Chablis.

White-yellow hue. Nose is full of apricots, starfruit, chalk, and flowers. Round and not overly ripe on the palate; white stone fruits, tart white grapes, rocks, and some citrus on the palate. The nose is certainly more ripe and open than the palate. Will evolve with more air and on day 2 and certainly with additional time in the cellar. I'd be inclined to hold off for a bit longer with regards to future bottles.

Burgundy 2011 Day 3: Lunch at La Millesime (La Millesime, Chambolle): Good, solid wine, but nothing great. Another rather disappointing Les Clos from a usually top-notch maker then. It was at least better than the 2007 Fevre we had the day before, but it still fell rather short of expected standards. I did like the nose very much. It showed some crazy minerality, along with salty seashell scents, white fruit, a touch of spice and lots of honeyed notes. On the attack, the palate was clean, clear and lemony, with a nice sense of texture and grip. On the mid-palate, the wine had tons of weight with fleshy white fruit flavours and rather un-Chablis-like honeyed tones, but this was underscored by a tremendous amount of extract and mineral and a whiff of seaside savouriness on a lush, mushroomy background. The long finish was studded with seashell and stone bits - nice length here, but such was the weight and flesh of the wine that it almost threatened to come across a bit fat, almost blowsy. Thankfully, all that extract and the minerality just about saves it at the end. A good solid wine, but it lacked the usual precision and focus that one would expect from a Dauvissat Grand Cru. Should get much better with time, as this wine had some good raw material in it, but it was just not very exciting on the day.

Opulent and rich with an inviting aroma of lemon curd, white flowers and spice. It is super rich, dense and concentrated in the mouth with layers of flavour and a hint of the exotic. It is large scaled Chablis that should age particularly well but offers hedonistic pleasure now with all of its overt fruits and sensual mouth feel.

Nice color with virtually no nose at all, slight salt and ocean/oyster taste, very good wine but not as great as the billing. It reminds me more 04 than 05 and could be a dead ringer for the Foret which I have had many time.

Maybe because this ended up being poured after the trio pf PCYM gems, but I found myself mesmerized by the mineral density on the nose and palate. The nose is filled with fresh mountain air, aromatic oyster shells and parafin followed by lemon and tangerine oil and that brilliant minerality. The palate is so stony, dry extract galore, bitter melon rind (in a good way), lemon, honeycomb, dried white roses, parafin, lemon pith, tart tangerine and a long finish. I'm not fond of pushing these, but I loved the condition and evolution at this stage.

A very pleasing over-achieving '06 but rarely hitting the greatness of the best vintages. Delighted we caught this in a lovely place given Dauvissat's penchant for pre-mox. Thanks Kevin!

Rich golden straw color. Nose of spiced apple and citrus fruits, pink grapefruit, pomelo, and notes of the sea (oyster, saline) and then some floral notes of white flowers and wet soil. Really lovely and vibrant. Palate is rich with white fruit, fresh apple, and citrus notes (lemon, tangerine). Great structure with plenty of acid and full bodied with a soft and full texture, like a velvet. Again notes of the sea, salty sour lemon with tremendous length. In a great place and drinking wonderfully now but feel like it will sustain if not continue to improve over the next 5-10 years. Really excellent.

My last of 4 btls and fantastic tonight at age 14. 2-1/2+ years have passed since my last and tonight's btl may represent the zenith for this vintage of Clos? PnP and slow ox for an hour prior to dinner in btl and Riedel Montrachets. Maturing but healthy medium gold color. Pristine, fresh seashore and citrus aromas. Serene mature resolution along with finessed; minerality, lemon-lime, orange peel, butter scotch and stone fruit for a spectacular autumnal cozy and yet energetic whole. Funny thing was as we were finishing our final pours about 3 hours in this was showing a bit more youthful structure on the final sips. Hanging onto any white Burg past 6yrs can be a roll of the dice but this blt shows how great Grand Cru Chablis can be with appropriate bottle age. 13% alc in a warmer vintage, not bad! Not sure I'd hold on to these any longer but not out fear but rather because this is drinking beautifully. 94+

2001 Red Burgundy at Chez Hugo (Chez Hugo, Baltimore): Much more along the curve that the two very fresh younger wines. Some sulfur / reductive notes at first not he nose that blow off, and to be honest give me a sense of comfort nowadays drinking white Burgs. Limestone, briny, some oyster shell, some caramel/ toffee and yellow fruits. On the palate, this is baroque and broad and in need of more acidity. It' full bodied, yet lacking definition: an impactful, direct wine lacking nuance. It's structured, with more of the same fruit on the palate, rich, broad shouldered and powerful, but lacking grace and definition. Impressive, but not very lovable. The ripeness and fatness of the vintage make this a difficult task in spite of great terroir and winemaking skill. It seems further along the maturation curve than I would expect from a 12 year old Dauvissat Clos, but in this case, I think it is the vintage and not Pox. It is drinking as well as it ever will I suspect, and to be fair, this is outstanding in a relative sense, but not what I hope fo rain GC Chablis, much less Dauvissat's. Lovers of rich and dense Chardonnay will like this much more than I.

2001 Red Burgundy Retrospective (Chez Hugo - Baltimore): I participated in a comprehensive white Burgundy tasting upon release of the 06 vintage and thought they were too fat, ripe and lacking acidity. My opinion really hasn’t changed over the years. Medium expressive nose displaying lemon curd, oyster jus, a hint of dirty damp cellar and a hint of limestone. Very good concentration, dense citrus fruit, medium acidity and mineral and a medium long lemon curd driven finish. There is a hint of the 06 bitterness that clips the finish. For my palate, the 06 remains the white vintage to avoid.

Loved the way this developed. Opened without a decant, but allowed the bottle some air for about an hour before indulging. Started with a piercing citrus acidity and eventually mellowed to allow a nice balance of apple, pear, and eventually a mild honey with a wet sandy undertone. It lasts quite a long time. Very very nice.

BTW, going back through CT notes, I seem to be alone in my misery on this one. Either people are just dumping their corked bottles without dropping a note, or this is the worst run of bad luck I've ever had with a particular wine.

The scent of tangerine (oil, pitch and fruit) is less intense than I'd expect from Dauvissat, but it is perfectly clear. Despite the full-bodied entry and full texture of the mid-palate, only a Chablis could be this limpid, watery (in the most positive sense, think of watered silk) and light. This may be untypical, but it is a truly outstanding wine, a great Chablis and a unique product of its vineyard, the talents of its maker and the vintage 2006. Great now after an hour, and at a cool room temperature. No hurry. 93P

Took to a small holiday party where a few other Chablis were also present. Again, just as 15 months ago this wine fails to wow me. Still think it lacks a bit of energy and lift. Rounder, softer than it a ought to be. Still, a nice minerality and some docile citrus notes. A nice wine but will it ever be a head turner, I doubt it. Others were more impressed than I, so that's good. No signs of premox and will likely age decently. Maybe its just stubbornly quiet? Pale gold color and clean light floral nose. 2 left. I should wait these last two out a bit. A 2010 Billaud Simon MDT blew it away for me and showed much more classic Chablis typicity.

Un vin très sec, dense, l'acidité parait presque basse, mais le vin est pourtant tendu et serré. Muet à l'ouverture, il développe une impressionnante complexité minérale. Le vin possède un style sérieux, austère, intriguant. Beau vin certes, mais pas grand ni à la hauteur de mes attentes. Encore jeune, il aurait bénéficié de davantage d'aération. 91+ pts

Not wowing me at this point for a Les Clos from Dauvissat. Feels a little flabby and lacking in typical acidity at this point. I'll try another soon to see if a different setting yields a different experience. I have 3 more and don't want to hang onto to these too long if lacking structure.

Seawater, oyster shell, white peach, stone fruits, salted butter. Very fleshy and lush with soft texture. Very clean with good length. There is some weight, but still manages to be graceful. I would say given the vintage, this may not be a great example either for Clos or the producer.

I got 4-5 of 0.375 bottles from the shop Auge in Paris and this is my 3rd time tasting. (wax-sealed for selling in France, even on half-bottle size)
Very good performance, clean, fresh and very nice texture. The real great Chablis !!!
I enjoy it very much, the acidity is lovely, the finish too.
This producer is the same level of Raveneau but more access when young.
Most of white Burg wines 2006 are sleeping now but not on Chablis.

Chablis les Clos (18 bottles) at the Lieu-dit Cru Blind White Burgundy Dinner (L2O - Chicago IL): Powerful and forward aromas with some ripe apple, peach and floral hints. Slight more reserved on palate but still on the lush side for Chablis. Good intensity and concentration, particularly on finish.

Intense ripe and lush stone fruit with a charming floral quality. Similarly ripe flavors with a slightly tropical character. Powerful and forward, but perhaps without the focus and precision of Dauvissat les Clos in more classic vintages. I have several bottles and will refrain from trying this again until 2015 or later.

From 75cl, cork of modest quality, stained half-way back, an evidently poor fit for the bottle neck (which flares after the first 1cm). Wine in good condition nonetheless. Youthful light white-yellowish tinge, no signs of premox. Scent, mid-palate and finish dominated by freshly peeled tangerine fruit. Wonderful limpid purity, saline on entry, some mineral vibrancy on the mid-palate (less than expected - perhaps a 2006 thing?) and very soft, even sweet on the tangerine finish. Soft, morbido, limpid, mineralwasser-weich, juicy: underwhelming in the best possible sense. Mature now, will probably - and hopefully - keep and mature further for at least another 5 years. I paid an excessive 79 EUR for this to a rapacious (and very rude) German merchant; for the 2008 and 2009 vintages I managed to find a fairer priced (and much nicer) source. This would be a fair QPR at about 40-50 EUR. 90-92P

Decanted 1 hour on day 1 and while impressive, conversation took precedence and the wine felt good, not great. Vacuvinned overnight. Day 2: the real deal, seashells, straw, grapefruit, granite, rainwater, and almond, chewy and long. A bit shy on the nose but spectacular on the palate. My guess is that this will be glorious 2015-2020.

Opened for 6hrs and decanted for 1.5hrs. This is a little bit steely and sharp compared to both Raveneau. Nevertheless, the aromas is impressive: complex, good depth: gun flint, steely, cold green herbs, ash, mineral, white and yellow floral that the complexity also reflected on the palate that is wonderfully rich and intense. The huge mineral and acid backbone is a little bit sharp however there is enough concentration and ripe fruits to buffer this off and give way to slightly creamy mouth feel that showed sense of class and finesse. The long finished has very good persistent with pineapple, mineral as well as touch of iodine aftertaste. Yet another world class Chablis though this is less refined than the Raveneau could offer. 90-91+

2011 Simple Series VII: Sean's Birthday (Imperial Treasure Super Peking Duck, Paragon): Better showing than the last bottle I had in Burgundy a few months back, but this was still very good rather than great. It certainly did not help that it was preceded by a quartet of fantastic wines, not least a pair of truly excellent Raveneau Grand Crus. Nevertheless, there was much to praise here. Opened 7 hours before serving, it was certainly a solid Chablis even in its youth. It was definitely a change of gear from the Raveneaus that came before. This had a seriously steely minerality that socked you the moment you stuck your nose in the glass. I liked that though. With bits of spice and dried flowery accents floating over the bed of stony, metally, seashelly mineral, it actually made for a very intriguing, complex bouquet. The palate was very nice too. This had quite a melting, creamy quality to its white fruited flavours. Rich, as one would expect from a Les Clos, especially in 2006, but always laced with more of that lovely mineral picked up on the nose. So minerally in fact that this was almost pure stone and flint as it pulled away into a long finish. With time, some juniper berries, spice and white chocolate notes started emerging. A solid wine, but too young and rather overshadowed by the pair of Raveneaus. I am a lot more sanguine about now than after drinking the last bottle though. One to revisit again, perhaps a decade later. My only worry, as with the last time, is that the wine seemed to lack some of the precision and definition of truly great, age-worthy Chablis.

White-yellow hue. Nose is full of apricots, starfruit, chalk, and flowers. Round and not overly ripe on the palate; white stone fruits, tart white grapes, rocks, and some citrus on the palate. The nose is certainly more ripe and open than the palate. Will evolve with more air and on day 2 and certainly with additional time in the cellar. I'd be inclined to hold off for a bit longer with regards to future bottles.

Burgundy 2011 Day 3: Lunch at La Millesime (La Millesime, Chambolle): Good, solid wine, but nothing great. Another rather disappointing Les Clos from a usually top-notch maker then. It was at least better than the 2007 Fevre we had the day before, but it still fell rather short of expected standards. I did like the nose very much. It showed some crazy minerality, along with salty seashell scents, white fruit, a touch of spice and lots of honeyed notes. On the attack, the palate was clean, clear and lemony, with a nice sense of texture and grip. On the mid-palate, the wine had tons of weight with fleshy white fruit flavours and rather un-Chablis-like honeyed tones, but this was underscored by a tremendous amount of extract and mineral and a whiff of seaside savouriness on a lush, mushroomy background. The long finish was studded with seashell and stone bits - nice length here, but such was the weight and flesh of the wine that it almost threatened to come across a bit fat, almost blowsy. Thankfully, all that extract and the minerality just about saves it at the end. A good solid wine, but it lacked the usual precision and focus that one would expect from a Dauvissat Grand Cru. Should get much better with time, as this wine had some good raw material in it, but it was just not very exciting on the day.
