Flickinger Tasting at The Casino (Chicago, IL): This was a Napa cabernet that hits all the archetypes in my mind. A boatload of black fruit is framed by some green pepper aromas. The palate is clearly ripe, but restrained and also shows a bit of a meaty character. Perhaps on the richer end of the Domini (?) that I've tried, this takes it close to the edge but never falls flat.
Drank for Thanksgiving with goose, bread dumplings and savoy cabbage. Wine stood up better to the course than the Cyril Henschke Cab/Merlot/CabFranc blend also drunk alongside although that one was the far more elegant wine.. Dark garnet color, bordering on "black". Good cabernet nose, some graphite, cedar and pepper. Quite dry on palate: Lots of tannin. finishes rather dry and austere. For me the tannins were overly dominant and detracted from the overall attractiveness of the wine. Will they ever fully integrate without drying out the fruit?
