Sadly this beauty is on the downward slope. Although there were no signs of over-oxidation and the cork came out cleanly, The bright notes on the tongue that I recall are gone. The color was a slightly dull light yellow rather than a bright and gleaming straw.

Seventeenth Annual White Truffle Dinner (Hughes House - Chicago IL): Served alongside a Dauvissat Preuses 00/07/08 vertical. Good richness and mineral textures, this is certainly very enjoyable just slightly lacking the power or heft I typically find from this wine...which I've enjoyed more many times in the past. I will have to try a bottle from my cellar some time soon.

Heaters (Chicago, IL): This second bottle wasn't good either. There was a waxy thing, and way too much browned fruit (especially in comparison to the Raveneau, and the first corked bottle) for it to be possibly considered correct. As an aside, this had some of those green notes from 2004 -- I had originally thought the problems were confined to the reds, but I've noticed it now and again in the white wines as well. A real disappointment here, even though I'm not a fan of Dauvissat to begin with.

From magnum. Superb wine that has many years in the tank. Has fleshed out and was better than a very good 11 Clos from standard bottle. I think the additional years here showed. Also the wine had been opened and aired for several hours. In a nice spot now but can further improve in magnum.

The Last Dance Magnum Dinner (The Krengels - Bannockburn IL): Magnum. Rich and intense aromatic start with lots of green and yellow apple, coming across as ripe for the vintage with very impressive depth. More classically Chablis-like on palate with the same depth and density. Very long and powerful finish. Great when first opened and tasted, and ever-so-slightly better a few hours later.

Oh what a stunner. So much weight, intensity and power along with a wondrous seashell minerality and superb depth and balance. Fantastic. Enjoyed alongside Raveneau MDT 2004 and 2008 and Butteaux 2008. Needed 4 hours in the decanter to truly show itself.

Single Blind Chablis Grand Cru Le Clos (Octo Fish Bar, St. Paul, MN): Light gold color. Drank 1 glass blind over an hour. This seemed like maybe it was a bit older, not really oxidized, but more harsh on the palate. There was some pretty sour grapefruit and biting citrus notes with some lemongrass and minerality. Despite that, it was still pretty good, though not up to past versions of the '04 we've had. Probably still 91-2pts.

A lazy Sunday afternoon gathering –All Burgundy (Eddie V's - Tysons Corner, VA): Drinking none-blind, the 04 LBT note is clearly there but not too bothersome. Perhaps the freshest Dauvissat along with the 10. White citrus fruit, smoke, white flowers and limestone. Very good concentration, cool and youthful, bright acidity, good mineral presence and a medium to long finish with a hint of the 04 taint at the end. It is a classic les clos minus the 04 taint.
Pale yellow. Fresh and lithe. Stony Meyer lemon and nectarine fruit. A bit of a talc like note on the finish. Beautiful example of gracefully aging Chablis.

Burgundy Wine club 2018: Slow to open, still coiled, and there is so much raw material here that there is a lot left to unwind. I caught glimpses of what the wine has to offer - white flowers and lovely fruit, and low layers of salinity, fleshy and broad but still focused and articulate as a wine of terroir. More time needed, maybe another 7-10, but seems like it will repay patience.

Whites at Oceanaire (Oceanaire, Mpls, MN): Medium gold color. Drank 1+ glass over an hour plus. Same bottle as Chablis28. This was interesting, very slow out of the gate. I wasn't quite sure where this was going to go, but it really emerged and showed great. Seashore, lemon, and an interesting anise note on the nose. The palate has great intensity and depth, round, medium full bodied, honey, power, lively lemon, very focused and good length. Loved it.

My last btl! This btl was again in pristine condition. Brilliant medium gold color. Reticent at first and likely could have used some air at the venue prior to drinking but I left it in my bag to keep chilled as our ice buckets were full:). Faint seashore aromas carry over to fresh delineated palate with a nice range of citrus & spice buttressing a glorious minerality. Over time picked up some salinity. Sleek, round and elegant tonight. Paired so very well with Oceaniare's crab cakes. Tonight's btl took a good 30 minutes to open up and then was in constant positive evolution until it was drained. Slightly less stellar than a previous btl this Spring but that was likely my fault for opening it right before drinking and serving it a bit too chilled out of the gates. Tonights btl was more and elegant charmer than a head turner. Its always tricky keeping the temp right at a restaurant that is 45 minutes from my house during rush hour.

Very tightly wound. Lemon/lime and chalk. The acidity provides a very firm core, which gives it a rock solid feel. This barely budged over the course of a couple of hours. Infanticide. Seemingly needs another five years minimum, and probably more like 10+.

Bright yellow. Intense nose of apple, blossom honey, iodine, and crushed rock. A firm minerality on the palate is wrapped in rich honey, with crisp acidity and a lush texture. The 2004 Les Clos is probably about as good as it will get, but should sustain this excellence for some time.

Double Blind White Burg (Dauvissat Chablis) (Formentos): Double blind in an 94/03/04/06 flight. The nose here was more bashful with notions of citrus, lemon oil and spice complementing white fruit. The palate had good concentration but was quite dense and non-delineated. Still has the acidity and freshness to age and unfold. Similar to the 04 Forest tasted earlier. Hold?

Dauvissat Clos, Preuses and Forest at Lieu-dit Cru Annual(ish) Blind White Dinner (Formento's - Chicago IL): Served (almost) double blind to the group, single blind to me in Dauvissat 94/03/04/06 les Clos flight. Big and brawny. Lots of classic Chablis orchard fruit character, but medium weight and complexity. I expected this to be the best wine tonight, and it frankly disappointed. Other bottles from the same case have consistent;y been better.

Wine Dinner Extravaganza; 4/21/2017-4/22/2017 (Smyth and The Loyalist - Chicago IL): Open an hour before serving in Dauvissat Clos vertical. Slightly corked. So frustrated because of this wine's great density and concentration, which hinted at its 94-95 point potential, based on previous bottles. Still tasty behind the faint corkiness, I'd think this still almost 90 points tonight.

Eight Killer Starter Whites & a Token Red (Oceanaire, Mpls, MN): Light gold color. Drank 1+ glass over an hour plus. This was another wow bottle. No surprise there I guess as it has killed in the past. I love it with oodles of saline and discreet minerality, wonderfully dry and crisp, classic citrus fruit, very long again and it has this powerful mineral driven finish. Very elegant with impressive intensity. Outstanding.

My wine and same btl as R&Rler. This btl was in pristine condition and hitting on all cylinders tonight! Brilliant light gold color. Terrific seashore nose carries over to the zippy fresh delineated palate with a kaleidoscopic range of flavors from stoniness to tangerine to salinity and lime. All of this in a sleek intense but elegant package. This was fantastic and paired so very well with Oceaniare's seafood! Just a blast to drink. One more, do I temp fait and hang onto it tills its 15 in 2020? Just might. Or, do just take it along with me to Zion NP soon.

Almost perfectly balanced at present. Light citrus, high minerality, with strong but rounded acidity. Slight, and entirely relative, weaknesses to the finish, but overall in a very good spot. Yellow. Astoundingly fresh scents of lemon, flowers, and oyster shell. Lovely entry and texture through the mid-palate, and then a lean, rocky finish. As opposed to a bottle tasted late last year which displayed truffle notes and other secondary/tertiary qualities, this bottle was as fresh and vibrant as could be, continuing to improve over several hours right until the last drop was poured. Superb.

This has really changed since last taste 4 years ago. Evolved nose straight from bottle of rubber, wax candle, lime, oyster shells and wet sand. Fat mid palate with butter clinging on the inside of the mouth. Long finish with good freshness amidst the full and fat sensation. Like a big breasted mama in a miniskirt...

Birthday lunch for Mike and Andrew: Served beside the Raveneau. Light gold colour. A bouquet of straw, lemon and stonefruit with wet limestone in the background. A relatively opulent nose, not showing strong saline or oyster shell aromas classic for Chablis. In the mouth, clearly showing some development. Grand Cru fruit weight, structure and complexity on palate. Excellent precision, balance and focus, with that volume of ripe, juicy fruit. Many tasters thought the Dauvissat better than the Raveneau but I preferred the greater linearity, tension and minerality of the latter. Years ahead of this wine.

Wednesday Night WTDS (Corner Table, Mpls): Light gold color. Drank 2 glasses over 45 minutes. Absolutely brilliant tonight, with amazing purity and lift, a finish that goes on and on for 90 seconds plus. This was irresistible; I simply could not put my glass down. To say this has typicity would be accurate but it would understate the beauty and power of the wine, but typicity there is tenfold. Explosive nose of sea air, white flowers, pear, lemon, tangerine, wow. The palate is impressively well endowed with loads of citrus extract, meyer lemon, tangerine, lemon chiffon, great cut and focus, pristine minerality, and a long saline infused finish. WOTN 96+pts.

Wow, this was a special btl hitting on all cylinders tonight! This is a Chablis lover's Chablis!. In excellent condition at age 11 with no signs of falling off. Brilliant light gold color. Senn-d off (part 2): Chablis at Nico Osteria (Chicago, IL): Slightly almondy on the nose. This was a surprisingly fruit-forward bottle of Chablis, especially given the vintage. There's plenty of acidity for that fruit to fall back on, so no worries in that department. There's a weird bit of funk (something I've picked up in many Dauvissat bottlings) that I just can't get over though.

Medium yellow. A bit undefined in the nose, greenish-yellowish fruit, a bit wishy-washy, hard to asses. In the mouth, it's much better, creamy, dense, with harmonic acidity. It's much better with food, but never breathtaking. I was expecting this bottle to give more joy, actually.

Light yellow. Intriguing combination of saline brothiness, citrus, and herbs-delectable nose! Medium weight but creamy and penetrating with a ton of late stone and acidity. The fruit is pure, ripe lemon. Wow, a great Grand Cru Chablis and the rare wine that has followed a trajectory that I envisioned for it when last tasted 4 years ago. Then, it was too young, but now it is really beginning to reveal its depth and complexity.

decanted one hour. lovely pale yellow; intense sweet citrus & zest aromas, underlying white mineral & wet rock; med/+ weight; meyer lemon curd, key lime pie, super minerally & just so slightly chalky at the finish, very long, delightful balance of fruit, acids & stone. so good.
Continuing to age gracefully. The formerly impenetrable minerality is beginning to loosen a bit. Nice secondary notes developing- an interesting talcum flavor on the finish.

I like the 04 vintage in Chablis, and last time I had this wine a year ago I loved it. This bottle was somewhat disappointing lacking the steely intensity of prior bottle. Nonetheless, a nice wine that was straw yellow in color with mineral and pear on the nose. Soft balanced palate of pear, crushed stones and a hint of lemon.

What I love in Chablis Grand Cru as well as the 04 vintage. Straw yellow. Nose of pear, limestone and the sea. Beautiful balanced palate of pear, minerals and a touch of lemon. Nice acidity with a long finish. Perfect with spinach pasta and a white truffled cream sauce.

Chablis 2004 Shootout...Raveneau, Dauvissat and Fevre...Top Vineyards (L2O - Chicago IL): Tasted single blind alongside Fevre and Raveneau 2004 les Clos. Sensational in every way. Apple and pear to start, lemon and lemon zest from middle to finish. Also classic Chablis character with plenty of oyster shell and limestone. I think this was everybody's favorite wine tonight, slightly preferred for now over the sensational Raveneau les Clos.

My fifth or sixth sample of this wine; inklings of maturity just unfolding. When first opened, the intense mineral/acid qualities you'd expect create an almost menthol impression that penetrates the palate into the sinuses. After half an hour of air, a new dimension and a real surprise - deep, round, clinging sucrosity (to a degree I've never experienced in a grand cru from this vintage), although the initial oyster shell character did not relent in the least. Kept improving until we'd drained the bottle. A long-distance runner with another decade of growth ahead.

2004 Vintage Burgundy Tasting and Oxidation Check (Part 1) (BLT Fish, New York City): Floral, stony, leesy and cool. Like other bottles I’ve recently opened, this needs another couple of years - true to the site and vintage, it is reluctant to unfold. After an hour, more richness is evident, but it remains a bit aloof. Not that there’s anything wrong with that.

Chablis Grand Cru Dinner (GT Fish & Oyster - Chicago IL): Rich and intense fruit on nose, showing surprising lushness and power for the vintage. Intense flavors of apple followed by lime zest and orange zest. Very good minerality and acidity provides great energy. My single real compliant is a slightly off moldy sense that came across strongly on the nose to start and mostly faded, but never fully disappeared.

Light yellow and straw colored. A transcendent bouquet of scents with hay, apricots, some grape and hints of wet wool. Concentrated and extremely well structured with and taste of minerals, citrus an in the background a subdued but well balanced hint of oak, the very pleasant aftertaste just goes on. This is an absolute superb wine that starts to show its potential after almost seven years in the bottle. Probably one of the best bottles of Chardonnay wine I have ever had. My wife said it was like drinking from a crystal clear mountain stream, something that Frodo would find in the land of the Elves. After opening two 2002 Chablis a few days ago (1:st cru and from another producer) only to find them bad, it was a great relief to taste the real thing. Dauvissat is considered one of the best producers in Chablis and Le Clos one of the best Grand Cru locations and this combination is truly extraordinary.

This has an inner nerve which I would expect from great white Burgundy! Still a bit unevolved (not closed though) on the nose, but with some wet stone, black banana and matches after 24 hours in a decanter. A bit lean attack, but with wood notes and a sweet underlying sensation on the mid palate. On the finish you can detect some butter. This will be very good in 3-5 years time.

Young, no signs of preox: this wine takes some time to open up, with brisk acidity on the palate...the complexity comes through on the palate, but not so much on the aromas...it is certainly very youthful - not showing any secondary at this time...very light bodied for a grand cru from clos...the precision of this wine is excellent however...good wine today, will be great in 10 years...

Very pale straw... Nose of limes, distinct mineral/sea spray aroma, pineapple upside-down cake with whipped cream... Taut and well balanced but surprisingly forward and already very drinkable. Really long finish with outstanding "cut" and "lift" as Steve Tanzer likes to say. A very successful wine!

Served from the fridge. Reticent slate and white stone fruit aromas. Entry of lime and lemon with a real austere minerally power in the mid palate which is almost mouth puckering, dry but not too dry, the wine softens and dissolves to a lingering and clean finish. Very much great Chablis.

Lieu-dits-Cru Richebourg and friends Dinner (Oceanique): Blind. Clear white/yellow color. Clear bright spicy zingy white fruit on the nose. Big tight zingy round acidic white fruit on the palate with a long tight finish. This was drinking 'younger' than the Fevre next to it, but there was a lot more going on. Will be a great wine in 5+ years.

Sadly this beauty is on the downward slope. Although there were no signs of over-oxidation and the cork came out cleanly, The bright notes on the tongue that I recall are gone. The color was a slightly dull light yellow rather than a bright and gleaming straw.

There was a waxy thing, and way too much browned fruit (especially in comparison to the Raveneau, and the first corked bottle) for it to be possibly considered correct. As an aside, this had some of those green notes from 2004 -- I had originally thought the problems were confined to the reds, but I've noticed it now and again in the white wines as well. A real disappointment here, even though I'm not a fan of Dauvissat to begin with.

From magnum. Superb wine that has many years in the tank. Has fleshed out and was better than a very good 11 Clos from standard bottle. I think the additional years here showed. Also the wine had been opened and aired for several hours. In a nice spot now but can further improve in magnum.

The Last Dance Magnum Dinner (The Krengels - Bannockburn IL): Magnum. Rich and intense aromatic start with lots of green and yellow apple, coming across as ripe for the vintage with very impressive depth. Oh what a stunner. So much weight, intensity and power along with a wondrous seashell minerality and superb depth and balance. Fantastic. Enjoyed alongside Raveneau MDT 2004 and 2008 and Butteaux 2008. Needed 4 hours in the decanter to truly show itself.

Perhaps the freshest Dauvissat along with the 10. White citrus fruit, smoke, white flowers and limestone. Very good concentration, cool and youthful, bright acidity, good mineral presence and a medium to long finish with a hint of the 04 taint at the end. It is a classic les clos minus the 04 taint.

Burgundy Wine club 2018: Slow to open, still coiled, and there is so much raw material here that there is a lot left to unwind. I caught glimpses of what the wine has to offer - white flowers and lovely fruit, and low layers of salinity, fleshy and broad but still focused and articulate as a wine of terroir. More time needed, maybe another 7-10, but seems like it will repay patience.

My last btl! This btl was again in pristine condition. Brilliant medium gold color. Reticent at first and likely could have used some air at the venue prior to drinking but I left it in my bag to keep chilled as our ice buckets were full:). Faint seashore aromas carry over to fresh delineated palate with a nice range of citrus & spice buttressing a glorious minerality. Over time picked up some salinity. Sleek, round and elegant tonight. Paired so very well with Oceaniare's crab cakes. Tonight's btl took a good 30 minutes to open up and then was in constant positive evolution until it was drained. Slightly less stellar than a previous btl this Spring but that was likely my fault for opening it right before drinking and serving it a bit too chilled out of the gates. Tonights btl was more and elegant charmer than a head turner. Its always tricky keeping the temp right at a restaurant that is 45 minutes from my house during rush hour.

Almost perfectly balanced at present. Light citrus, high minerality, with strong but rounded acidity. Slight, and entirely relative, weaknesses to the finish, but overall in a very good spot. Birthday lunch for Mike and Andrew: Served beside the Raveneau. Light gold colour. A bouquet of straw, lemon and stonefruit with wet limestone in the background. A relatively opulent nose, not showing strong saline or oyster shell aromas classic for Chablis. In the mouth, clearly showing some development. Grand Cru fruit weight, structure and complexity on palate. Excellent precision, balance and focus, with that volume of ripe, juicy fruit. Many tasters thought the Dauvissat better than the Raveneau but I preferred the greater linearity, tension and minerality of the latter. Years ahead of this wine.

There's a weird bit of funk (something I've picked up in many Dauvissat bottlings) that I just can't get over though.

Medium yellow. A bit undefined in the nose, greenish-yellowish fruit, a bit wishy-washy, hard to asses. In the mouth, it's much better, creamy, dense, with harmonic acidity. It's much better with food, but never breathtaking. I was expecting this bottle to give more joy, actually.

I like the 04 vintage in Chablis, and last time I had this wine a year ago I loved it. This bottle was somewhat disappointing lacking the steely intensity of prior bottle. Nonetheless, a nice wine that was straw yellow in color with mineral and pear on the nose. Soft balanced palate of pear, crushed stones and a hint of lemon.

Lemon zest and floral aromas to start with lemon, lemon zest flavors, with lots of minerality and acidity. Not quite as good another bottle opened last year, seemingly slightly less powerful.

What I love in Chablis Grand Cru as well as the 04 vintage. Straw yellow. Nose of pear, limestone and the sea. Beautiful balanced palate of pear, minerals and a touch of lemon. Nice acidity with a long finish. Perfect with spinach pasta and a white truffled cream sauce.

Chablis 2004 Shootout...Raveneau, Dauvissat and Fevre...Top Vineyards (L2O - Chicago IL): Tasted single blind alongside Fevre and Raveneau 2004 les Clos. Sensational in every way. Apple and pear to start, lemon and lemon zest from middle to finish. Also classic Chablis character with plenty of oyster shell and limestone. I think this was everybody's favorite wine tonight, slightly preferred for now over the sensational Raveneau les Clos.

Chablis Grand Cru Dinner (GT Fish & Oyster - Chicago IL): Rich and intense fruit on nose, showing surprising lushness and power for the vintage. Intense flavors of apple followed by lime zest and orange zest. Very good minerality and acidity provides great energy. My single real compliant is a slightly off moldy sense that came across strongly on the nose to start and mostly faded, but never fully disappeared.

Light yellow and straw colored. A transcendent bouquet of scents with hay, apricots, some grape and hints of wet wool. Concentrated and extremely well structured with and taste of minerals, citrus an in the background a subdued but well balanced hint of oak, the very pleasant aftertaste just goes on. This is an absolute superb wine that starts to show its potential after almost seven years in the bottle. Probably one of the best bottles of Chardonnay wine I have ever had. My wife said it was like drinking from a crystal clear mountain stream, something that Frodo would find in the land of the Elves. After opening two 2002 Chablis a few days ago (1:st cru and from another producer) only to find them bad, it was a great relief to taste the real thing. Dauvissat is considered one of the best producers in Chablis and Le Clos one of the best Grand Cru locations and this combination is truly extraordinary.

Very pale straw... Nose of limes, distinct mineral/sea spray aroma, pineapple upside-down cake with whipped cream... Taut and well balanced but surprisingly forward and already very drinkable. Really long finish with outstanding "cut" and "lift" as Steve Tanzer likes to say. A very successful wine!

Lieu-dits-Cru Richebourg and friends Dinner (Oceanique): Blind. Clear white/yellow color. Clear bright spicy zingy white fruit on the nose. Big tight zingy round acidic white fruit on the palate with a long tight finish. This was drinking 'younger' than the Fevre next to it, but there was a lot more going on. Will be a great wine in 5+ years.
