This is still holding up extremely well for the vintage. Although there has been some bottle variation in the case. Rich, smooth, super-well integrated. Tertiary cab notes on the nose. Japanese plum, damson, earthy truffle and cream on the palate. Long with a little drying tannin on the palate. Drink up, but still brilliant. Au revoir my friend over several years. This is the last bottle.

Coravin fun - Domaine de Chevalier rouge (My place, Kent Street): From Coravin. Black over very slight red currant, plummy notes, very slightly dusty sweet spice, cedar, cream. Juicy, fleshy, that slight red berry notes is surrounded by those darker hued fruits, grippy tannins are coarse flour textured, slightly bitter on the finish but long, good.

Watery, with little depth or clarity. Slightly dusty and dilute Cabernet. Smooth and easy to drink, but lacks the fruit to age. Would have shown well 5yrs ago when there was more youth. 88pts and drink up

Coravin fun - Domaine de Chevalier (My place, Kent Street): From Coravin. Cream, blackberry, a little cherry, plum, sweet spice, cedar. A very slight baked fruit quality. With time some blackcurrant and biscuit. On the palate it's very fresh black fruits, cedar, cream, sweet spice with plentiful drying coarse sandpaper tannins. All in balance. Long. Yum.
An exceptional red wine. Brown on the edges. For a 16 year old wine, there's so much fruit. Went so well with a roast lamb. Good left bank cabernet dominant. One of the 1001 to try before you die chateaux. Good cellar conditions - peaking now. Drink up

The wine looks garnet colored. The legs are medium. There is light sediment in the bottle. It smells like blackberry, dust, flint, light toast, oak and mint. It tastes like blackberry, black currant (cassis), dust, flint and mint. The body is medium/full. The wine has polished texture. The wine finishes medium. The wine has medium acidity.

Some nice development here. There hasn't been a huge amount of tertiary development and this bottle feels a little more tired than the last. Not sure there will be any further improvement in these.

Coravin fun - Domaine de Chevalier; 2/23/2022-3/6/2022 (My place, Kent Street): From Coravin. Brambles, blackcurrant, a little plum, cream, sweet spice, cedar, a little leather, toast with time. Juicy, fleshy, generous, brambles, tannins are softly textured with a slight drying tug, long, lovely , showing really well today.
This wine has a deep yet clear colour with a lovely nose of blackcurrant, garnet plums, tobacco and gravelly earth. The palate has a nicely rich ball of fruit that is quite mouth filling and which leads nicely into a soft if somewhat short finish.

Ruby color Cranberry. Red currant (I really enjoyed getting a nice whiff of the smell from the bottle after opening it) light smoke Cedar Little oak Long finish Drying mouth Light coarse Tannins Young still Integrated Good now but prefer tertiary aromas. Not bad for the $50 I spent and for being a weaker vintage.

Nice clean closure and fault free. Colour is vibrant ruby - no real hint of garnet although clear rim is wider than I recall. Nose is black fruit, pencil and wet stone. Palate is so much better than I remember from this vintage - very nice drinking window. So nice on the initial taste that I decided not to decant lest the magic be lost. Bursting with blackberry, black cherry and blackcurrant. Lovely saline streak, silky fine grained tannins and a long savoury finish. Not a vintage of note it is said, but this wine is hitting its stride big style right now.

Still bright ruby, nose of sweet blackcurrant, blackberry and black cherry. The palate has sweetness on entry with all that black fruit that were captured but it has some secondary flavours emerging of forest floor and earthy notes. On the lighter side of medium, tannins fully resolved, one minute finish. Better than I remember.

Deep colour - garnet at the very rim. Nose of leather and cedar, with air, fruit comes out - cherry, raspberry. Palate is medium bodied, with not quite the intensity of the nose. Tannins have smoothed markedly since my last sampling. Very juicy on the mid palate. The finish is quite long, but not intense. It is not as lactic as it was - though there is still a touch there. This has certainly improved since my last tasting, and is very good right now.

Darkly coloured and drinking well but has much more potential for ageing. Aromas of cedar and pencil shavings dominate - being somewhat a little edgy and overpronounced - but there is ample black fruit as well. On the palate it is quite full, juicy and smooth. Was 2007 a warm year in Bordeaux? As far as I know it was a rather difficult vintage with lots of rain, so there seems to have been a very good selection of grapes at the Domaine. A good wine which I would not hurry to open for at least five years.

Coravin fun - Domaine de Chevalier rouge; 8/4/2020-8/12/2020 (My place, Kent Street): From Coravin. Slightly jammy blackcurrant and red berry, a little biscuit/toast note, cream, cedar, tiny touch of pencil shavings, there is also the impression of fruit cordial. With time starts to show a little tertiary leather and earth. In the mouth it is juicy with medium plus intensity acidity and more crunchy than jammy fruit on the palate goes hand in hand with slightly coarse tannis, a touch of rhubarb joins on the finish. Balanced. Very nice.

I recently withdrew one case from storage after buying EP from TWS. This is the first bottle - Open and poured not decanted although there is some chunky sediment in the bottle. My initial reaction was positive. Great deep ruby colour at the core. Long legs. The nose is full with secondary notes spice, wood - not too much fruit - plums maybe. On the palate it's rich and full, with soft tannins that are fully resolved. Good long finish that mirrors the nose. Very nice so far. I'll see how it develops overnight. 2+ hours in it paired very nicely with a sirloin steak with a rocket salad. On the nose now, compost, wood, smoke. It's rich on the palate with the tannin and acidity coming through at the end leaving a lovely creamy mouth feel. A good example of a good wine from a sub-par vintage that drinks very well with food - that the professional tasters never do. I will drink the rest over the next year or two as I can't see the wine getting better.
It's lovely now.

Not the best DC, but a delicious wine, full of spritely cassis and nutmeg with a hint of Pessac earth at the end. The finish brings it back into focus, grounds it and it is needed because otherwise the fruit would be a little too exuberant.

2/12 and drunk during the pandemic over a Houseparty.
Bordeaux in maligned vintages often over achieves and this is no exception. Classic red fruits, leather & cigar on the nose. By no means a plush, round wine in the mouth, this is rather austere and medium bodied at best with a streak of acidity. Fantastic QPR at less than £20 back in the day.

Already past its prime, a lot of smoked wood (too camouflate the poor vintage?), the (dark) fruit isn't completely ripe. The acidity is there but not in balance with the rather prominent bitterness.

Dinner with Pinheiro’s (Our house): 3 hour decant, drank with a cassoulet main course. The nose was the real winner here, powerful, red fruits, leather, cigar. So much there. On the palate it was little thinner than expected, fine grain tannins, with leather and herbs being more prominent than in the nose. Fine drinking from a weaker Bordeaux year.

Coravin fun - Domaine de Chevalier rouge (My place, Kent Street): From Coravin. Savoury, slightly meaty, earthy, slightly peppery spice, brambles, plums. With time cream, vanilla and a touch of jubiness. Quite savoury on the palate, juicy with similar fruit and flavours on the palate, a little herbaceous quality as well. Tannins are floury textured and quite drying though the fruit persists. Hmm.

We opened 2 bottles to go with a cote de boeuf. A Rodney Strong Californian cabernet sauvignon varietal, and this one - left bank cabernet sauvignon dominant. Both were superb. Both full of luscious fruit and went very well with the beef. There was distinct stronger vanilla on the nose with the French one, even though the Californian was also 'framed int eh finest oak barrels'. The Domaine de Chevalier was clearly finer and more polished on the nose, palate and aftertaste (both round, smooth, pleasant medium to long length). Not a fair direct comparison as the French was £10 dearer even though 2007 was not an outstanding year, but the difference did stand out.

Deep colour, savoury nose with some leather, coffee, kirsch. Palate is balanced, a waft of raspberry. Finish is moderate. Well made wine but lacks depth. Fading a little? Tertiary aromas are developing. May see some benefit from further aging.

2 consistent bottles. Potpourri of primary, secondary and emerging tertiary aromas. Leather, tobacco, graphite and slight sous bois. Less developed in the mouth but inviting dark fruits, and lovely balance and smooth. Good lenght. Drank best a bit chilled. Great pairing with cote de boeuf and lamb racks from the grill. More upside here.

Opened and right away thought WOW! Then I realised I had opened an 09 by mistake... Following day opened the right bottle. Not decanted, just left for 10 minutes or so in glass. This is a great wine for drinking now while waiting for the longer maturing vintages. It has the typical Chevalier elegance, balance and cigar box notes. Good definition and focus, integrated tannins, medium bodied. A top 2007. ***

Sorry, but this is a 90+ effort drinking beautifully, like a lot of 2007 Cru Classe Bordeaux nowadays. I sense, slight violets, earthy, perfume aromas after 1hour aeration. Surprisingly rich for the vintage. Not tannic either. Modern winemaking overcame a difficult vintage. Uttlerly, a charming, drinkable wine with complexity. Tertiary aromatics came to the table after awhile, which indicates a drink me, want me, love me now Bordeaux!

Dark cherry red. An intense nose of horse stable and blackcurrant & raspberry jelly with notes of pencil shavings and cigarbox. In the mouth, this has a juicy texture, only medium body, but with good concentration of flavours. Fine, but still present tannins. Very drinkable, but not too serious or deep. Note that I poured the wine using a Coravin, so it benefitted from aeration.

Rød med litt lilla. Meget mørk kjerne. Gode fargeintensitet helt ut i kanten. Intens lukt av solbær. Smak dominert av mørke bær, men litt vandig. Mangler litt fylde. Middels lang. Muligens en litt dårlig flaske.

On the nose, the wine is clean with a medium(+) intensity. There are distinct herbaceous aromas (green capsicum, grilled jalapeño). Swirling reveals a black fruit note (blackberry) and very subtle oak (cloves). The wine is youthful.
On the palate, the wine is dry and has medium acidity, medium alcohol, and medium(+) body. The medium level tannins are soft and fine-grained. The flavours have a medium intensity and show notes of black fruit (blackberry), subtle herbaceous characters (green capsicum, grilled jalapeño), and very subtle oak (cloves). The finish has a medium(+) length.
This is a very good quality wine. The flavours are distinct and have a very clear expression of Cabernet Sauvignon, with typical black fruit and herbal aromas. The flavours are concentrated, and have a great balance with the alcohol and the acidity. The soft tannins have a great balance with the acidity and complement the flavour profile. The subtle oak treatment does not interfere with the expression of the fruit. The wine shows primary and secondary characteristics, is very drinkable and has a finish with great length.
The wine drinks well now, and is suitable for further ageing. The fruit intensity is good, and there is some tannic structure and acidity that will help support the wine as tertiary notes develop.
[Note: Cabernet Sauvignon 55%, Merlot 35%, Cabernet Franc 5%, Petit Verdot 5%]

Red berries and tobacco on the nose. Cherry, plum and clove on the palate. Stood up to duck breast with asian spices quite well. Something to match with food rather than a stand out in a tasting. Versatile performer for game fowl or red meat.

Very nice in this off vintage, Great nose of cherry and tobacco. On the palate, soft, sweet red cherries, cedar, tobacco and a smokey finish. Tough to ask more of a 2007. 92 pts. Needs a long decant or 2-3 more years but close to ready - but will drink well for a number of years, no risk of this going downhill anytime soon. Recommended.

Less obviously 2007 than some Medoc Cru Classe. Not as bright and herbaceous, which (I know it sounds odd) makes it less approachable now. It has more substance, and demands a bit more time.
As expected - good wine.

Coravin fun - Bordeaux + ring in & Dom. de Chevalier (Kennards, Waterloo): From Coravin. Red currant and spice, dusty notes, hints of tilled earth on a hot day, cedar and very subtle toasted coffee notes.

This has really developed into a lovely wine - after an hour in the decanter this has a beautiful, refined nose with black fruits and crushed rock on the palate. Starting to develop very nicely - certainly will last a lot longer that I had initially thought - the 07 vintage has reigned this back in a bit from the bigger vintages and I think it works well here, with the mineral elements of the wine being more prominent. I'd be inclined to keep them a few more years to see what happens, but no shame in cracking one now.

This great 2007 always performs. In fact, I'd say this is pretty prime and ready to go. While it can hold in the cellar, I believe it's fully integrated and not sure if will get any better. Has all the qualities and traits known from this gem of a property. Excellent effort, perhaps a touch more finesse due to the vintage. Medium bodied with fresh fruit and good character. After decanting not too much changed after the first 45 minutes. Just a straight up delicious wine that is ready to be enjoyed. 92-93 points

My first domain de chevalier red and it has jumped straight into my list of favourite bordeaux châteaux. Even the supposedly poor 2007 vintage hasn't diminished the style and charm of this wine. Excellent stuff. Will be hunting down some bottles from the decent years. Decanted for 3hrs.

Coravin fun - Dom. de Chevalier tasting (E & M's in the rocks, Sydney): From Coravin. Slightly jammy red fruit, plum, slight meaty notes, biscuit, slight metallic notes with time. In the mouth there are flavours of red berry over plum, aniseed, chalky tannic burr, alcohol warmth intrudes on the medium plus length. Bit young for me.

From Coravin. Aromas of pencil shavings, graphite and an almost crushed rock quality over red currant and plum. Spice and cedar. In the mouth the wine is surprisingly dense on the mid palate with fine, persistent, talc textured tannins and flavours of red plum and berries with sweet spice and a tiny sweet vanilla hint. Quite long. Nice.

1st of my 2007 bottles tried. Decanted and followed from 90 mins. At 13*C. it then was fresh, juicy and quite intense with dark ruby colour and expressive nose giving away lots of vanilla and violet notes, red (and some black) berries, pepper and some earthy notes at the very back. This carried on in the glass, except that the vanilla flavor was much less prominent. On an early summer day this definitely got my good mood going, and a bit of an eye-opener to me. Will definitely try some of my other bottles kept lightly chilled. Eventually, and with temp picking up, it got less expressive both on nose and in the mouth however showing much more complexity and overall balance: the darker fruits/berries came more through, as did notes of leather, tobacco, graphite, spices, and liquorice. Smooth, silky tannins and good length. I enjoyed this wine – probably more when had on its own although it was pairing quite well with entrecôte (rib-eye) also. It is not especially long lived, but can not see any issues with cellaring further 5-7 years.

Consistent with previous bottle. Very accessible with red and black fruits, tea leafs, new oak. Unlike other 07 Bordeaux, this one has no green note. A smokey and earthy wine, a typical graves, but the weight was not there due to the weak vintage. But it is good value to money young Bordeaux that is drinking very well now!

We poured the wine into a wide decanter, had the first glass after about 15 minutes and followed the wine’s development over a period of another 2.5 hours. It was dark ruby in colour and offered a complex nose of floral notes (lilac & violet), red and dark fruit, cherry, cassis, blackberry, raspberry, strawberry, cedar, leather, tobacco, graphite, spices, pepper, cinnamon, clove and liquorice. On the palate the wine showed red and dark fruit, cherry, blackberry, plum, cassis, cedar, leather, tobacco, spices, pepper, cinnamon and liquorice, with medium-plus acidity, medium-level, soft, sweet tannin and very good length. I liked the wine; it admittedly lacked in structure, became flabby paired with food and will not be long-lived, but it had good complexity, became juicy with aeration and drank very well on its own. I would recommend decanting for 90 minutes. Drink now and over the next three to five years.

This beauty from a very prodigious pedigree, during a difficult vintage, is very open and ready. Leather, chocolate covered cherry, earthy elements, cedar, granite and lavender. The palate swarms in a lithe way...her own way. Long and fleshed out, with slightly round tannins. Decanted for an hour. Alluring. Drink now - 2025.

Plenty of perfumed, cassis driven fruit on the nose. Some cocoa, wood, and maybe cola. Palate is supple, with plenty of juicy fruit. Savory, with sweet tannin and vibrant acidity. Perhaps just a touch diluted on the length. Well made wine with life ahead of it, but probably not for the really long haul.

it is in a closed and rather awkward fase, certainly not in its drinking window, I suggest waiting at least 3 years before opening this, it is difficult to give a score in this stage, the 89 is a potential score, what is a correct thing to do for a young wine I find, the stuff is there and it is a proper Pessac-Léognan, future will tell what this wine will deliver

Dark core with vibrant magenta rim, beautiful and expressive nose. Spring flowers, spices, and dark fruit just jump from the glass. Concentrated on the entry, with a touch of oak, yet displays fine finesse and alluring texture. This wine has plenty of complexity and length. If I recall, the team at Chevalier decided to gamble and pick late due to the complicated vintage. And... it certainly paid off. I would not guess this was a 2007. This claret may very well be even better than their outstanding 2006! On the finish it just bursts with more vibrant fruit. Probably one of the best Left Bank reds of the vintage. Here is one 2007 rogue to gravitate towards. This one is already awesome now with some decanting, or hold and follow over the next several years. This is a property to depend on during challenging vintages. Very consistent and always a great pleasure. 93-94
Decanted over 1-2 hours. Inviting nose of dark berries, a bit of sour plum, mocha, earthy, savory notes. Smooth palate with dark berries, high acidity and polished tannins. Finish a bit short but hey, no complaint for the price. From 375ml.

On the nose graphite, cedar and gravel. On the palate the tannins are beautifully smooth, but certainly present (medium). Well balanced medium+ acidity. And a very long finish, classic Bordeaux! Seemed so much better than the first bottle, drunk a month earlier, but this one was properly decanted. Drinking well now, but should improve a little over time. Certainly much better than I was expecting from a 2007.

Appearance: Bright and clear, it has deep ruby color, with garnet rims and legs. Nose: Clean, with medium (+) intensity aromas, showing black fruit of blackberry, cassis and dark plum, oak notes of cedar, pungent spice of licorice, mineral notes of earth, maturity notes of tobacco and forest floor, kernel notes of dark mocha. The wine is developing. Palate: Dry with medium acidity, the wine has medium (+) tannin of ripe and velvety texture. Medium in alcohol with medium (+) body, it has medium (+) intensity flavors of black fruit such as blackcurrant, blackberry and plum, oak notes of cedar, pungent spice of licorice, sweet spice of cloves. The wine has a medium finish. Conclusion: Very good quality Pessac-Leognan red with an intense nose showing plenty of complexity, the wine has ripe black fruit and not much green notes, quite contrary to the assumption as it comes from a bad vintage. On the palate it has robust fruit characters, with good balance and structure, showing fair range of flavors with reasonable length. Ready to drink now, the wine can benefit from further ageing of another 3-5 years.

Quite complex and very attractive nose, deep red and dark fruit notes, cedar, tobacco, smoke. On the palate a lot less complex, quite linear with a pretty tart finish. Approachable, friendly and nice, but I doubt it's going to massively improve. 89-91
Domaine de Chevalier Tasting with Adrien Bernard (Crystal Wines Valley Point): Beautiful youthful perfumed nose, didn't evolve much in the glass after loads of swirling. Inoffensive but a tad forgettable on the palate, tannins roaring so this will need more time (despite 2007 being termed an "early drinking" vintage). Perhaps the wine will show better in another five years?

Nose of blackcurrant and vanilla. The palate is blackcurrant, some crushed stone, bell pepper, tannins are still pronounced and drying and not quite integrated. This seems a bit one dimensional, despite it being an "average" Bordeaux vintage, I expect, of perhaps hope, this wine will improve and take on more complexity. Currently good but no more than that.

Decanted 3 hours but still warming from a very cold Canadian cellar. Subtle scents of stewed red fruits, tobacco, graphite, and violets. Not as subdued on the palate and the character of the Cabernet shines thru: fruit, earth, spice, and oak. Sure the finish is a bit sawdusty, but overall it has more balance and sophistication than the Lucia. Like most good Pessacs it mediates between right and left bank styles for easy and early drinking reds.

Also allowed to breathe in the bottle for an hour first; surprisingly drinking well tonight compared to the 2006, and less acidic too; this wine was able to improve quite a bit with time in the glass; lovely nose loaded with apples, cherries (white), caramel, and rose petals; on the palate, bitter chocolate, dark fruits, green herbs, and dry oak; the finish was fruity, herbal, oaky, and medium-long; 90-91 for now; may improve slightly down the road, but probably not much; well, time will tell.

Limpid crimson red color - not especially dense. Nose fine melange pf blackberry and dark cherries with nice earthy tobacco touches. Palate medium weight with complex spectrum of flavors which unfold on the palate. Medium length with just a touch of shortening from greener tannins. Soft mouthfeel from the Merlot with spice from the Cabernet. Good interesting food wine at oresent and probably for 5 years or so.

Sitting in a lovely place right now with perfect tension between minerals, fruit, structure and acidity. Doesn't really have the depth or stuffing for long term ageing, and the more I drink these 2007s the more I believe they should be drunk before the fruit fades. This is stamped through with a cool and compact quality, with minerals, liquorice, black fruit and spices. A touch lightweight on the mid palate which never quite lives up to the impressive nose. Nevertheless this is very good drinking now. Will keep, but I would be inclined to drink over the next 3 years or so.

Looking fairly young. Oak, tobacco, coffee and cocoa more dominant on the nose than fruit. Palate is supple, soft and grainy. Not terribly rich in fruit and slightly short. Will probably improve over the short term, but not one for long term. But nonetheless still a very good wine in a poor vintage.

A very fine wine with an opaque ruby colour and a focused nose of black fruit, smoke, vanilla/sweet spices and warm brick. Evident new oak possibly more than 50%. Velvety in palate with zesty acidity, minerality and robust fine-grained tannins. Definately can age.

Masterclass - 2007 Bordeaux Horizontal (Conrad Hotel): While this is not as profound as the Blanc, this is actually drinking well and delicious. Soft aromas of tobacco, cigar, blackcurrant, blueberry and sandalwood, quite complex and expressive already. This possess very good freshness and soft in texture, good sweetness at the mid palate with friendly depth and rounded palate that is quite fine. The medium finish is quite powdery though.

2007 Bordeaux Tasting (Conrad Centennial Singapore): Ripe flavors envelop the sweet soil and smoke infused nose. Rather ripe on the palate despite the vintage. Lots of Merlot character here. Friendly and immensely enjoyable now at its primary stage.

Dark purple, typical Bordeaux nose. Graphite, pencil shavings. Nicely balanced on the palate with rich fruit. Underlying minerality. Good finish. Overall a pleasure to drink now but I'm sure will benefit from a few more years in bottle.

Graves GCC. Very lot of funk on the nose, almost like a garbage truck just drove by. Palate is very New World, extracted but flat. Some minerality giving hints to its Graves terrior. Acidic (7.2/10). http://sgbordeaux.blogspot.com/2011/03/crystal-wine-bordeaux-2007-tasting-part.html

Very dark purple in colour. A sweet nose of bramble blackberries and leather, silky tannins with a nice fruit mouthful, the finish was tart with a hint of liquerice. I am a fan of the 2007 vintage, they are not keepers but taste so fresh at this age when perhaps in better years the big names would not be approached for a decade or more.

A very juicy, ripe and enjoyable bottle of wine that seems really has the legs for some nice aging here. Maybe 5-10 years. Ripe fruit, but with gravelly minerals underneath that give this a more crunchy, stoney feel. Very plump right now and blacker than black but this could actually be worth a bit of a punt, despite the poor reputation of the 2007 vintage. Special mention to the cork which I think was probably the longest I have ever seen. Not a great Dom de Chevalier, but one that should please.

I'd defy anyone to say this wine is not enjoyable (at the right price). It is a pleasant mid deep purple colour but already showing signs of development. The nose is pretty, summers rain on hot stones kind of smell along with ripe but gently herbal fruit. The palate is delicate and smooth but falls away alarmingly without discernible tannin or acidity. Showing dilution but the ripeness is sufficient to give pleasure. For my palate, this is ready, though it comes with an ambitious cork and I dare say it could totter on another decade if required.

Tasted this with Domaine Chevalier's proprietor, Olivier Bernard, during a wine tasting event. Deep purple color with a strong barnyard nose. The body is full, intense, and richly concentrated with flavors of dark cherry, oak, scorched earth, pencil shavings but ends with sweet tannin. Well-balance, very focused, and bright acidity. An overachiever for the vintage. This will be great to drink from 2014 to 2024.

Very dark garnet with a savoury, toasty nose. Ripe and well balanced with spicy tannins and a lovely depth of flavour; sweet blackcurrant fruit and creamy toffee on the finish. Not as lightweight in the middle as other wines from the vintage. Still young, but very good.

Domaine de Chevalier Wine Lunch (Blacksalt): Nose showed a lot of pencil lead, underbrush, dark cherry, and cassis. Palate was thinner than most of the other cuvees, but it was also drinking quite well. Good red fruit, nice earthy notes, with an acidic finish. Not super complex, but offered a really enjoyable experience. If only the price was 50% less, this could be a really nice purchasing option.

Wine Cellar - Bordeaux Right Bank (sort of) (Wine Cellar): (Tasted Blind): A deep and rich ruby colour and a nose of typical red berries, green tomato, tobacco and some dried earth. A fresh and sappy entry, with a gravelly texture and abundant chocolate notes suggesting extensive oak ageing. The mid-palate offers a beautiful grip and a texturally appealing experience that gives sweetness, chocolate and light spices. A long finish. Very enjoyable. Blend of 63% CS and 30% Merlot.

First class stuff all the way. Remarkably dense and deep for the vintage. The wine has integrity. Obviously from a great terror. The fruit is well-defined, expressing notes of mineral and forest underbrush. Substantial tannins wrap the fruit. Like a bespoke as a Saville Row suit, not flashy, but you can't miss the quality of the raw materials or the rendering of them.

Attractive and approachable on the palate with plum and red berry flavors. The acidity, tannins, and fruit are very well balanced here in an elegant style.

Ruby color
Cranberry. Red currant (I really enjoyed getting a nice whiff of the smell from the bottle after opening it)
light smoke
Cedar
Little oak
Long finish
Drying mouth
Light coarse Tannins
Young still
Integrated
Good now but prefer tertiary aromas.

Domaine de Chevalier lunch (Macleay Street Bistro, Potts Point): The appearance is clear and deep ruby in colour. Tears are present.

This has really developed into a lovely wine - after an hour in the decanter this has a beautiful, refined nose with black fruits and crushed rock on the palate. Starting to develop very nicely - certainly will last a lot longer that I had initially thought - the 07 vintage has reigned this back in a bit from the bigger vintages and I think it works well here, with the mineral elements of the wine being more prominent. I'd be inclined to keep them a few more years to see what happens, but no shame in cracking one now.

Belle couleur grenat profond, ocelle rubis.

From Coravin. Aromas of pencil shavings, graphite and an almost crushed rock quality over red currant and plum. Spice and cedar. Quite long.
