Pale straw to yellow in the glass with oodles of bruised green apple, a significant mineral aspect, and a subtle, but persistent, oaky, yeasty component. The palate is initially quite tart and the effervesence is vibrant, but the fruit (again, bruised apple) comes through eventually on the mid-palate. Wonderful. I would argue that this wine still needs a bit of time as it is still rather nervous, but it is oh so tasty now. Outstanding. 93 Points.

Disgorgement january 2023, dosage 5.5 grams. Base vintage probably 2018. Wow! It's been a while since I last had this cuvée and I am impressed as it bests recent bottles even of Charles Heidsieck Brut Reserve and Louis Roederer Collection 244. Why? Here we have simply more of everything. Starting with a beautiful light golden color, indicating quite some red varities in the blend, and lots of fine tiny bubbles. On the nose there is a melange of red fruits, lemon, also a touch of more exotic yellow fruit and sweet brioche, everything delivered with great purity and immediate appeal. On the palate the champagne is full-flavoured and fruit-driven, feels sweeter than the dosage might suggest (which leads me to a 2018 base), however, it remains focused, fresh and finishes on a beautiful mouth-cleansing note of chalk. Overall this is luxurious and true to its origin and should please a lot of palates. Baby-Krug comes to mind.

Opened without much of a "pop". Maybe a bit of lemon on the taste and maybe a touch tart, but not much going on; decent acidity; bubbles quickly disappear. Acidity kept this fresh, but not much else to recommend it. Disgorged October, 2017.

Gorgeous autolytic notes, lemon zest, sage, chalk, minerals, and almond paste. Beautifully delineated acidity, to give lift and length to the satisfying finish. Drink through 2025+.

Retail $50. Disgorged December, 2015. 45% Pinot Noir, 33% Chardonnay, 22% Pinot Meunier, 20% fermented in oak. I have many iterations of this wine now, from almost as many disgorgements and while each is certainly different, there is a common thread and a unifying ethos. Outstanding.
£75/btl at 67 Pall Mall. Served possibly a bit warmer than ideal, cooled down in the ice bucket over time. Rich and almost rose-like texture balanced by white flower freshness. Vinous. Tiny but persistent effervescence contributed to the sense of richness, mousse embedded within rather than exploding out of it.

I have gone through a fair number of bottles of Bruno Paillard and with each cork popped, I become more enamored with the wines and the brands. That is certainly the case here, once again. Bright, fruity, layered, with lovely yeastiness and tartness. Whoa. Similar notes.

Retail $50. Disgorged December, 2009. 45% Pinot Noir, 33% Chardonnay, 22% Pinot Meunier, 20% fermented in oak. We opened this bottle shortly after draining a bottle that had been disgorged a full decade later (2019 for those mathematically challenged). While many in Champagne will try to convince you that non-vintage Brut (or in this case, multi-vintage) will not improve in the bottle after release. I say "Poppycock." Wow, what a difference. Toaster and even smokier with a chestnut aspect. Creamier, richer, with a smokiness that was not present in the younger wine. This is gangbusters.
Retail $60. There is little worse than going to look for a bottle of Bruno Paillard only to find it not there, already consumed, given away, stolen, broken over someone’s head, missing. Oh wait there is something worse: when there are two such bottles missing.

Not my preferred style. I felt this lacked structure and body. Lots of crisp fruit, citrus, bright acid, and mineral all around. Very fine bubbles which add some elegance to the wine. I felt this was very much lacking in the bread/yeast/toast category, which has gotten me addicted to champagne these days.
Maybe just needed cellar time? Either way, this was not the champagne for me. Wouldn't buy again.

Disgorged October 2015 (pictured). Aged almost six years in my modest cellar. That very compressed cork that allows to recork it. Small bubble for a palid golden colour. Slightly metallic on the nose with citrus notes. Also a touch of salty with pastry memories. Elegant and complex. On the palate it is refreshing and quite long. Acidity guarantees that length. It still has a long life ahead. Really digestive and aniseed. Better on the table right now. Just wait a little more.

- Yellow color with small pearls - Very nice, light, crisp with small bubbles. A bit overly acidic and zest of lemon for such a Pinot Noir-forward production but thats what Mr. Paillard confesses to achieve. Overall a delightful champagne. Drink now. Cheers.

Nice bubbles. Pale yellow. Sweet orange in the nose, it reminds me a lot of a Veuve vintage. Also on the palate sweet orange and orange flowers. After a while it opens up and delivers primrose. A fairly simple offering with some noticeable residual sugar. A good entry level, not too exciting, I wished more acidity/structure. The bottle I have tried it was ready to go. Tried side-by-side with the second in order from Paillard, the blanc de blancs, which appears to be at a very different higher level of structure.

This is the third bottle of Premier Cuvée with a 2019 disgorgement and based on my notes, this just might be the best bottle of the three. While I have never met M. Paillard, I have met his daughter and CEO, Alice, on several occasions and she might be the single nicest person I have ever met. While that is a lot, I don't know how much that has to do with the wine (although I choose to think it means just about everything), which is fantastic. Nutty, yeasty, and loaded with citrus on the nose, brilliant acidity, creaminess, and a walnut aspect on the palate. This is undoubtedly from the same "batch" of wines as the last bottle I tried and even though this was disgorged just a few months before the previous bottle, there seems to be a decided difference. From a 1/2 bottle, disgorged in September 2019. This one was showing beautifully. Had this in a 15 person virtual tasting where each person had received the same bottle (along with a couple of other splits). This just showed beautifully right off the bat with crisp flavors, some complexity and a chewy finish. Not a blockbuster, just a very nice champagne that could be served without shame, on any occasion.

A really nice and rich champagne where a significant amount have spent the first fermentation in oak barrels and it’s made with the ‘Solera’-method that dates back to 1985! This gives the champagne both old and aged notes but also the young fresh acidity from the newer vintages. Citrus, toast / bread and some hints of tropical fruits.

I have had some fairly old bottles of this wine over the years, but this, certainly by comparison, was fresh and new (I bought it in January, 2016--disgorged December 2015). A bit golden in the glass with citrus and baked goods on the nose. The palate is quite tart and lively--a bit too much so for my liking. Golden straw color with pastry dough, Meyer lemon zest, white flowers, pear, red fruit, almond and a hint of oyster shells. The palate approaches full-bodied, and is refined, ebullient,and balanced with a creamy delicate mousse and racy,lemony acidity. Initially flavors of pear, quince, and Meyer lemon then gives way to raspberry, cherry, toasted almond, ginger and a bit of honey flavors with a long citrus and chalk driven finish.

Rich yellow color. Nice mix of chalk, limestone, flowers, with lemons, apricots, and notes of biscuits and toasted almond. Brisk and vibrant on the palate with clean, crisp acidity and lots of minerals and chalk and crushed shells. Flavors of lemons, orange, apricot mix with biscuits, flowers, ginger, and minerals. Lovely, as usual, from Bruno Paillard. From 32 different villages, vinified separately, this wine consists of 45% Pinot Noir, 33% Chardonnay, 22% Pinot Meunier, with at least 25% reserve wine. Showing well. Lovely, yeasty, baked bread aromas over Meyer lemon, yellow plums, ginger, and a hint of slivered almonds. The palate is crisp, vibrant, and enlivened with poised effervescence and lip-smacking acidity. It could use more persistence but closes with refreshing, loquat-infused, marine-like tones on the fluffy, creamy finish.

Disgorged in 1990 this still has a gentle prickle from the remaining bubbles. There’s some toast, mushroom and crème briulee development. The palate is quite full and buttery with tinned peach fruit flavours. Chalky acidity carries the finish.

April 2011 disgorgement. There is a hint of sherry on the nose which carries through to the palate and also shows a squirt of lemon, ginger and baked apple notes. The bead is fine, the palate a bit toasty, developed with some notes of bottle age, but also fresh and with good cut.

Elegant, in addition to all the characteristics one comes to expect from a top quality champagne the balance between the acidity, flavor palate, and fruit sugars/dosage is very fine, brilliant. In that respect like the best of Riesling.

Light citrus nose, more elegant easy-to-drink style but not a lot of complexity, slightly higher dosage, probably makes sense for NV premier cru. Good value bubbles.

2017 Family Xmas; 12/23/2017-12/25/2017 (Alicante - España): Disgorged December 2014. Aged to perfection. Elegant on the nose with aromas of cereals and candied citrus. Very briochey. Also notes of white chocolate. On the palate it has depth and a good length. Delicious acid, bready and at the same time refreshing. Silky texture. Always great quality. Aspiring to greatness.

Because the cork did not expand much and it seemed a bit more aged, I think this bottle was at least about 5 yrs old. Great QPR for this wine - I would buy again for various low key celebrations (like days that end in 'y').

Disgorged May 2015. Hmm, not bad. Nose shows some thick, vanilla cream soda and powdered fennel, but thankfully it's not too syrupy. Pretty good for an unreasonably cheap champagne. This feels more stainless than the 08 Resonance last night. This feels like far more of an ideal pairing to caviar.

From a magnum bottle degorgé in March 2011, further matured in a cellar for some 5 years. Pinot Noir 45%, Chardonnay 33%, Pinot Meunier 22%.
Medium deep, developed yellow color. Rich, but very pungent and reductive nose of smoke and gunpowder - very reminiscent of smoky, volcanic wines of Santorini and Mallorca. After some aeration, notes of sweet cookie dough, green apple and saline minerality emerge. Ripe, broad and full-bodied, even voluminous in the mouth with flavors of vanilla creme, ripe citrus fruit, stony minerality, some smoke and a hint of dark-toned cherry fruit. Good acid structure and showing some sense of concentration and a hint of dosage richness as well. Rich, frothy and even a bit robust mousse. Long, ripe and dry finish with flavors of ripe citrus fruit, spice, some grapefruit, a little yeasty breadcrumbs and a hint of developed caramel character.
I've never been a fan of Paillard's Premiere Cuvée, as I find it lacking in character and depth. However, this is a completely different story, with attractive richness, complexity and breadth combined in a robust, structured expression. This is really nice and enjoyable stuff - apparently this label just needs several years before it starts to drink beautifully?

Dinner w/ Alice Paillard (Champagne Bruno Paillard) (Matisse - Washington, DC): Richer yellow color. Some marzipan and peanut on the nose, along with lemon curd and nectarine. Rich body but lovely acidity combine for a great texture, the rounder feel is contrasted with a crisp and mineral-driven aesthetic. Orange pith, white cherry, lemon, touched with toasted bread and honeybutter. This blend comes from 32 different villages, vinified separately, it’s a blend of 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier with at least 25% reserve wine. This spends three years on the lees and sees a 6 g/l dosage. Disgorged May 2015.

More evolved this time with a deep golden colour and a pressure of carbonic is highly attenuated by time. On the nose is like to be living in the middle of a fancy pastryshop with aromas of brioche and covered syrup croissant. Also rich wheat and other roasted cereal and hazelnuts. A dry delight. On the palate is even better: first a sense of tremendous vinosity. Density and creaminess come together harmoniously to offer a long journey although the throat with a refreshing though persistent performance. Dégorgée on Mars 2011. My kind of Champagne. Btw under 89? Probably you drank it too soon...

Another standout producer from last week's tasting in Chicago held by the Champagne Bureau, Bruno Paillard is a new discovery for me, and I find myself wondering how it is I've never tasted it before. Stated on their website, "putting together a wine is very like for a painter carefully choosing the origin of colours" as a trained fine artist and former winemaker, I could not agree more. The Première Cuvée boasts classical lines and multi-faceted beauty, one first notices the extremely fine mousse, followed by razor-sharp minerality, oyster shells and persistent bubbles give way to layers of brioche, citrus, orchard fruit, and more nuanced aromas of raspberries and Queen Anne's cherries. 2016 Sella Ronda Ski Trip; 1/21/2016-1/24/2016 (Alta Badia, Italy): By the glass at La Stua de Michil, Corvara . Actually the back says Extra Brut. This is June 2015 discorgement, Very clean, citrus, firm, good acidity, nice ripe fruit. Quite elegant but lacks a bit of depth at this stage and a bit linear. Very nice still and a worthy 89.

Champagne - BYO blind: (disgorged in January 2012) Broad, milky-vegetal, round and smoky bouquet. Seems to come from a warm climate, as accidity seems to be on the lower side, at least for me. Character of a softer BdB (may be lower pressure in the bottle?). Lovely caramel finish and smell in the empty glass.

Gevrey-Chambertin and Game (Nicolas Restaurant, Teck Lim Street, Singapore): Served blind, I really liked this – I thought it was actually a vintage Champagne from a strong house. It had a nice creamy nose, with appley scents wed to light floral notes and a little touch of crème fraiche. There was a gently fruity sweetness on its midweight palate, with a fleshy feel to its ripe apple and lemon flavours that suggested some dosage and more than its fair share Pinot Noir. A gently creamy mousse and nice juicy acidity then came through to make a simple but very yummy mouthful. A really polished, well put together NV champagne.

Champagne - 100 Vintage and NV Champagne; 12/15/2015-12/15/2020: Medium yellow. Nose of bee wax, nuts, flowers, some white fruit. Very nice palate with good acidity and limited dosage, this is very much in a dry white style and not sweet at all, low dosage. Well balanced and elegant. Good to go with food as well.

Fine Vines Fall 2015 Portfolio Tasting (City Winery - Chicago IL): Tasting, brief note. Lots of orchard fruit with some lemon peel hints. Almost half Pinot Noir, but this comes across as more Chardonnay-driven to me with lots of precision and linear character. I like this a lot for its price.

A private dinner (Restaurant Tennerhof, Kitzbühel, Austria): Complete and refined, relatively dry style, finely woven interplay between the richness of the Pinots and the freshness of the Chardonnay, flowers, ripe citrus, red apple, nice minerality, silky, hint of nutty depth from the vin de réserve, good length. Really well constructed and really very nice.

Very pure and clear. Accompanying a tatin apple pie with ice cream so the same echoes in both, nose and mouth except for that fabulous feeling of living in a croissantery and some mineral notes of iron, premature oxidation ? In the palate showed richly bitter and medium-haul. Solid? Well, in this particular case a definition, nothing else. Comparation for a Jacquesson? Really? Which one?

Toronto Cru Monthly Tasting - July 2015 (Jay's Place - Toronto, On): August 2011 disgorgement. Purchased recently from an American retailer. Storage unknown. The nose on initial pop was a bizarre combination of onion skin, burlap, plastic and cheese rind. Despite that the palate felt correct and mature of toffee, lemon peel, baked bread and orchard fruit. After several hours of air the nose finally brought the pleasure of the palate showing the bready and toffeed notes.

Another bottle of this NV from a stash I bought years ago and aged in the cellar. Time has been kind to this NV. Opens with notes of apricot on the nose that soon settle into a more clear-fruited palate with slight buttered brioche notes. The bead is very fine, the palate is tapered yet very expressive with white and clear fruits, solid underlying acidity. Very nice clarity and focus. Very good. Amali with Bruce, Michel and Stephen V.

Medium straw color with golden hues. The palate is dry with hints of citrus, nectarine, ripe banana, ginger and grapefruit on the front palate. But as you go towards the mid palate, there's some dark fruits as well - cherry, currants and toasted almonds. Very lively acidity and long on the finish with hints of fig, anise and slate minerals. This is just delicious, and well-worth the price. It's complex, yet so easy to drink and attractive. Drink now until 2020.

Yellow-green color. Quite understated nose showing very subtle developed, autolytic character and restrained fruit notes of mainly sweet red apples with a hint of creaminess in the background. The wine feels quite simple and one-dimensional on the palate with rather light flavors of stony minerality, some citrus fruits, a little bit of autolytic nuttiness and a hint of sweeter yellow fruits. High in acidity with very fines, smooth and persistent mousse. The finish is medium-long with nuanced but rather light flavors of nuttiness, some red apples, a little bit of tart and savory citrus fruit character and a hint of chalky minerality.
A very predictable, one-dimensional and understated Champagne with a restrained and linear character. Nice freshness but that's about it. Offers very little of anything of interest. Overpriced at 46,90€.

This has many of the aspects of a fine Champagne, clear, pale color, small, even bubbles, bright acids, so why don't I like it more? The nose displays notes of crushed rock, brioche and stone fruit, the palate is a well balanced profile of citrus, yeast, toast and mineral flavors but there's a deep flavor of something like yeast, but with a bit more funk to it that just puts me slightly off. I enjoy drinking it, but it's not fantastic, in my opinion.

Consumed with fish roe. On the nose very linear with lemon zest and hints of toast. On palate, citrus driven with nice tones of Meyer lemon, tangerine, green apple and hints of toast. Racy energetic finish. I think a couple of years of bottle age will help this a lot but it is a great match for seafood and oysters.

I left a bottle of this at my parents' house in FL, where it sat upright in a cabinet at room temp for almost one year. That provenance notwithstanding, this was excellent. Green apple and citrus fruit on the palate, with terrific acidity and definition and cut. Really refreshing, nicely elegant. Enjoyed over two nights, fresh and enjoyable both nights. In FL.

Nose: The nose is well balanced with brioche, breads, baking spices, citrus tones, and lots of red apples. There is nice complexity, but the nose is lacking some depth.
Taste: Medium/full bodied with medium+ acidity. The feel is real nice with red apples, breads, baking spices, and mineral tones.
Overall: This wasn't as good as what I had two years ago. It's well balanced, but lacking some depth and complexity.

The NV Bruno Paillard Champagne Brut Premiere Cuvée is medium (-) yellow in colour with rather fine bubbles. The slightly oxidative nose opens up to pine nuts, walnuts, ash, orange peels, apricots and ripe melons. On the palate, an initial burst of fruit flavours such as lime skin, lemon peels, passionfruit and apricots before progressing to a palate profile of ashes and pine nuts. There's also a noticeable underlying acidity.
Good drive before ending with a burst of lemon squash. Good acidity with refreshing clean cut and crisp, medium-length finish. Pretty low dosage at 6g per litre of sugar.

The NV Bruno Paillard Champagne Brut Premiere Cuvée is bright gold in colour with fine playful bubbles. A rather yeasty nose with pears, lime, grapefruits and pine nuts. On the palate, an entry of pine nuts, walnuts and yeast before approaching its subtle fruit flavours. Nonetheless, continues to be quite a mouthful before approaching the end-palate. The wine ends on a broad and fat acidic finish of lemon squash and lime with a medium-length finish.

WS Offline (Pastis - Vancouver, BC): Disgorged 03/2011. Plenty of yeasty bread aromas on the nose along with some fresh ginger spice, crushed almonds, rich red apple skins, lime, caramel, and a spritz of tangerine citrus. Tons of tart green apples on the palate with more almonds and plenty of spice, along with a firm backbone of lemon zest. A bit tart on the finish with plenty of lime and a touch of heat. Overall quite reserved on the nose, displaying a bit more depth on the palate with a crisp citrus finish and laser like acidity. Good+

Lunch at Le Beaulieu (Le Beaulieu, Plaza Athenee, Bangkok): Disgorged in September 2011, I thought this was a very pleasing NV and pretty good value for what it is. Pleasant nose, with white fruit, lemony scents and some flowers. The palate had a nice, very gentle feel to it, with rounded flavours of lemons and green apples on the attack broadening out into a wider base of white fruit, before ending in a gentle stream of minerality. Fine mousse, great balance, all very pleasant. This was a great food champagne, nothing exciting, but a nice way to kick off a Saturday lunch.

Lemon curd and white peach on the nose with some almond cookie and liquorice. Dry, smooth and refreshing mid-weight palate with ripe white to yellow fruit and some bitter citrus zest touches. Some brioche and maccadamia. Long finish. Good stuff! Well-balanced, relaxed and rather rich without obvious sweetness or the ever-so-ghastly sulfury bite I hate in many young richer Champagnes.

Grower Champagne for Third Thursday (Willamette Wine Storage): The nose is interesting, showing a touch of somethings savory wrapped in a pie crust and some lemon/lime scents. The lemons and limes roll in fully on the palate, and sweetness shows itself on the mid palate. A bit of nutmeg is noticeable on the finish. The acid is on the lighter side for me.

Francine's home dinner with the Benningtons (Home in Dubai): Medium(-) lemon, fine bubbles, numerous sources. Austere nose with well developed autolytic aromas: yeast, bakery and green fruits shining through. Dry, medium (+) acidity, flavours of lemon, green apples, red berries, medium(+) body. A toast with Bruno Paillard Champagne #2 (La Strada @ Shaw Centre): Alcohol :: 12% Degorge: Sep-2001. Dosage: 6g/liter. Aged on lees for 3yrs and rest for 5 months for post Degorgement recovery before release to the market. Opened for 2hrs. 2nd bottle. While this bottle display similar oxidative note of honey and toasted bread, nuttiness, this is fresher and more complex than the 1st bottle with brown sugar, lentil, red apple, focus and perfume, especially the brown sugar aromas that's really attractive. The acid has rounded up and the sweet green and red apple, sweet lemon giving it a great balance and the light spiciness added complexity to it, this bottle show that this cuvee will need at least 5-7yrs to mature and develop better harmonious. The mineral infused long finished with good weight and brown sugar aftertaste with freshness. I pretty like and lover of oxidative style Champagne will find this enticing too.

The bouquet is more developed and matured compared to the bottle that degorged in Mar-2011, quite oxidative that display lots of nuttiness and honey in the core accompany by yellow flower, orange, pear as well as metalic minerality, this is a different beauty if you like your Champagne oxidative. However, deep inside the aromas there is hint of TCA and the palate re-assure me that this was a cork bottle, no fruits and disjointed with TCA. A pity....

Expressive and focus, a bit austere but compensate by eucalyptus, fennel, earth, green apple, mineral and hint of metal. This is notably sweeter, fruitier and slightly sharper with gripping acidity compared to the BDB that glide through the palate with light saline mineral, citrus flavors that linger on the long, powerful finish. Not bad but I prefer the BDB as it is more precise and detail.

Disgorged April 2007 (love that they clearly show that on the back label). Light straw with a very fine and persistent mousse. Fresh smells of orchard and citrus fruit with a touch of spice. Very fresh and clean with baked and fresh apples, lemon and some bread dough. A lovely, feminine wine that has benefited from a couple of years in my cellar--a practice I highly recommend for those with the space and inclination. This disgorgement could go for few more years.

A toast with Bruno Paillard Champagne (Les Amis - Shaw Centre): Alcohol :: 12% Degorge: Jun-2010. Dosage: 6g/liter. Aged on lees for 3yrs and rest for 5 months for post Degorgement recovery before release to the market. Light dark golden color with fine beads that's not so vigorous. Austere and less expressive on the nose, with earthy tone and underlying white fruits and mineral along with just a hint of nuttiness. The entry is a bit sharp and similar to the nose, austere. The salted mineral dominated the flavor profile hence the savory taste with white citrus fruits that move on to the pure, light clean finish. Easy going and refreshing. Lay down for another 1-2yrs and the wine should come out from the shell. Buy - Maybe

A decent aperitif. Very clean on the nose, soft, focus of citrus lemon fruits, herb and a hint of brioche and yeast that added little more depth and complexity which carry thru to the palate with slightly sharp, refreshing moose. The fruits is clean and vibrant and again, with a nice gentle touch of yeast and mineral that add dimension leads to refreshing, slight dry finish and this remain soft and elegant. When pair with beef tartar, it shows some herb flavor and fuller body.

From a 375 ml. The back label noted (clearly and unmistakably - no silly codes to decipher) that this bottle was disgorged June 2005. How refreshing.
nose: sweet apple, mineral, dust, bit of spice palate: pear and lemon were finely laced with ginger. Quite nice, though the midpalate could be described as watery, and the finish wasn't wholly complete, lacking in body and shorter than I'd like. Bubbles were frenetic, though. I would drink this again, though I suspect that a more recent disgorgement might have fuller fruit. Certainly good stuff.

From Magnum: Served at just below room temperature. Straw gold in color with a very active beading. Green apple and yeast with a sharp and structured mineral foundation and acidity. Not complex but very enjoyable. Medium finish. The overall balance and integration of this wine showed noticeably better with the larger format than I've tasted of this wine from .750ml.

Very good, but lacking in consistency. Light golden color. Vigorous mousse. Medium-sized bubbles. It’s hard to believe this was the same wine that I raved about last year. Astringent apple nose. Crisp apple flavors with almonds and lots of citrus in the mouth. Far too acidic this time, lacking all the balance and elegance I remember. Medium-short finish. Don’t get me wrong – this is still a lovely Champagne, it’s simply not that consistent. Tasted from a 375ml half-bottle.

Fantastic! My first experience with the house of Bruno Paillard – and it will certainly not be my last. This is an incredibly elegant Champagne that I would consider a great choice not just as an aperitif but also as an accompaniment to many dishes. Light golden color with plenty of fine bubbles. Toasty nose with a hint of citrus, but otherwise closed. Multifaceted and evolving palate. Initial flavors of almond bread and apple are followed with hints of cherry and darker fruit. Has an amazing balance of both richness and elegance. Medium-length buttery finish. Very good value. An excellent Champange that I’m now very pleased to know.

This was a terrific discovery for me. A split around $20 which would be a highly enjoyable sipper but also might pair nicely with food. Definite Apple-Pear notes on the nose with a foamy, creamy cherry/strawberry quality and I thought just a slight hint of citrus. Very nice subtle acidity. I thought the finish quite short, though I see Parker said it was long... perhaps my taste buds cut out early. Delicious and probably one of the two wines I will seek out and buy from this evening.

WineFlock - 1997 Australian Horizontal (My House): Pale gold/yellow color. Bright zingy green apple nose with hints of mineral and yeast. Nice yeasty (not toasty) dusty white fruit on the palate. A bit tight on the finish with a carmel note.

Tignanello Vertical Tasting and Dinner (Establishment Restaurant, Manchester): Initially, there is a real yeasty-white peppery blast on the nose that almost takes your breath away, but it settles down nicely. A light, white bread, fresh nose. Light and very crisp on the palate with fresh green flavours. This could probably do with a bit more bottle age as it feels a bit too green, acidic and a touch tooth-stripping. Very prickly in the mouth. Very Good/Very Good Indeed.

Retail $50. Extra Brut. Disgorged October, 2019. 45% Pinot Noir, 33% Chardonnay, 22% Pinot Meunier, 20% fermented in oak. Pale straw to yellow in the glass with oodles of bruised green apple, a significant mineral aspect, and a subtle, but persistent, oaky, yeasty component. The palate is initially quite tart and the effervesence is vibrant, but the fruit (again, bruised apple) comes through eventually on the mid-palate. Wonderful. I would argue that this wine still needs a bit of time as it is still rather nervous, but it is oh so tasty now. Outstanding. 93 Points.

Disgorgement january 2023, dosage 5.5 grams. Base vintage probably 2018.
Wow! It's been a while since I last had this cuvée and I am impressed as it bests recent bottles even of Charles Heidsieck Brut Reserve and Louis Roederer Collection 244. Why? Here we have simply more of everything.
Starting with a beautiful light golden color, indicating quite some red varities in the blend, and lots of fine tiny bubbles. On the nose there is a melange of red fruits, lemon, also a touch of more exotic yellow fruit and sweet brioche, everything delivered with great purity and immediate appeal. On the palate the champagne is full-flavoured and fruit-driven, feels sweeter than the dosage might suggest (which leads me to a 2018 base), however, it remains focused, fresh and finishes on a beautiful mouth-cleansing note of chalk.
Overall this is luxurious and true to its origin and should please a lot of palates. Baby-Krug comes to mind.

We opened this bottle shortly after draining a bottle that had been disgorged a full decade later (2019 for those mathematically challenged). While many in Champagne will try to convince you that non-vintage Brut (or in this case, multi-vintage) will not improve in the bottle after release. I say "Poppycock." Wow, what a difference. Toaster and even smokier with a chestnut aspect. Creamier, richer, with a smokiness that was not present in the younger wine. This is gangbusters.

Not my preferred style. I felt this lacked structure and body. Lots of crisp fruit, citrus, bright acid, and mineral all around. Very fine bubbles which add some elegance to the wine. I felt this was very much lacking in the bread/yeast/toast category, which has gotten me addicted to champagne these days.
Maybe just needed cellar time? Either way, this was not the champagne for me. Wouldn't buy again.

Disgorged October 2015 (pictured). Aged almost six years in my modest cellar. That very compressed cork that allows to recork it. Small bubble for a palid golden colour. Slightly metallic on the nose with citrus notes. Also a touch of salty with pastry memories. Elegant and complex. On the palate it is refreshing and quite long. Acidity guarantees that length. It still has a long life ahead. Really digestive and aniseed. Better on the table right now. Just wait a little more.

Ligeramente metálico en nariz con notas cítricas. También un toque salino con recuerdos a pastelería. Elegante y complejo. Al paladar se muestra refrescante y bastante largo. La acidez garantiza la longitud. Todavía tiene una larga vida por delante. Digestivo y realmemte anisado. Mejor en la mesa ahora mismo. Solo espera un poquito más.

Nice bubbles. Pale yellow. Sweet orange in the nose, it reminds me a lot of a Veuve vintage. Also on the palate sweet orange and orange flowers. After a while it opens up and delivers primrose. A fairly simple offering with some noticeable residual sugar. A good entry level, not too exciting, I wished more acidity/structure. The bottle I have tried it was ready to go. Tried side-by-side with the second in order from Paillard, the blanc de blancs, which appears to be at a very different higher level of structure.

This is the third bottle of Premier Cuvée with a 2019 disgorgement and based on my notes, this just might be the best bottle of the three. While I have never met M. Paillard, I have met his daughter and CEO, Alice, on several occasions and she might be the single nicest person I have ever met. While that is a lot, I don't know how much that has to do with the wine (although I choose to think it means just about everything), which is fantastic. Nutty, yeasty, and loaded with citrus on the nose, brilliant acidity, creaminess, and a walnut aspect on the palate. This is undoubtedly from the same "batch" of wines as the last bottle I tried and even though this was disgorged just a few months before the previous bottle, there seems to be a decided difference. A really nice and rich champagne where a significant amount have spent the first fermentation in oak barrels and it’s made with the ‘Solera’-method that dates back to 1985! This gives the champagne both old and aged notes but also the young fresh acidity from the newer vintages.

I have had some fairly old bottles of this wine over the years, but this, certainly by comparison, was fresh and new (I bought it in January, 2016--disgorged December 2015). A bit golden in the glass with citrus and baked goods on the nose. The palate is quite tart and lively--a bit too much so for my liking. Because the cork did not expand much and it seemed a bit more aged, I think this bottle was at least about 5 yrs old. Medium deep, developed yellow color. Rich, but very pungent and reductive nose of smoke and gunpowder - very reminiscent of smoky, volcanic wines of Santorini and Mallorca. After some aeration, notes of sweet cookie dough, green apple and saline minerality emerge. Ripe, broad and full-bodied, even voluminous in the mouth with flavors of vanilla creme, ripe citrus fruit, stony minerality, some smoke and a hint of dark-toned cherry fruit. Good acid structure and showing some sense of concentration and a hint of dosage richness as well. Rich, frothy and even a bit robust mousse. Long, ripe and dry finish with flavors of ripe citrus fruit, spice, some grapefruit, a little yeasty breadcrumbs and a hint of developed caramel character.
I've never been a fan of Paillard's Premiere Cuvée, as I find it lacking in character and depth. However, this is a completely different story, with attractive richness, complexity and breadth combined in a robust, structured expression. This is really nice and enjoyable stuff - apparently this label just needs several years before it starts to drink beautifully?

On the nose is like to be living in the middle of a fancy pastryshop with aromas of brioche and covered syrup croissant. Also rich wheat and other roasted cereal and hazelnuts. A dry delight.
On the palate is even better: first a sense of tremendous vinosity. Density and creaminess come together harmoniously to offer a long journey although the throat with a refreshing though persistent performance. Dégorgée on Mars 2011. My kind of Champagne. Another standout producer from last week's tasting in Chicago held by the Champagne Bureau, Bruno Paillard is a new discovery for me, and I find myself wondering how it is I've never tasted it before. Stated on their website, "putting together a wine is very like for a painter carefully choosing the origin of colours" as a trained fine artist and former winemaker, I could not agree more. The Première Cuvée boasts classical lines and multi-faceted beauty, one first notices the extremely fine mousse, followed by razor-sharp minerality, oyster shells and persistent bubbles give way to layers of brioche, citrus, orchard fruit, and more nuanced aromas of raspberries and Queen Anne's cherries. Toronto Cru Monthly Tasting - July 2015 (Jay's Place - Toronto, On): August 2011 disgorgement. Purchased recently from an American retailer. Storage unknown. The nose on initial pop was a bizarre combination of onion skin, burlap, plastic and cheese rind. Despite that the palate felt correct and mature of toffee, lemon peel, baked bread and orchard fruit. After several hours of air the nose finally brought the pleasure of the palate showing the bready and toffeed notes.

Medium straw color with golden hues. The palate is dry with hints of citrus, nectarine, ripe banana, ginger and grapefruit on the front palate. But as you go towards the mid palate, there's some dark fruits as well - cherry, currants and toasted almonds. Very lively acidity and long on the finish with hints of fig, anise and slate minerals. This is just delicious, and well-worth the price. It's complex, yet so easy to drink and attractive. Drink now until 2020.

Yellow-green color. Quite understated nose showing very subtle developed, autolytic character and restrained fruit notes of mainly sweet red apples with a hint of creaminess in the background. The wine feels quite simple and one-dimensional on the palate with rather light flavors of stony minerality, some citrus fruits, a little bit of autolytic nuttiness and a hint of sweeter yellow fruits. High in acidity with very fines, smooth and persistent mousse. The finish is medium-long with nuanced but rather light flavors of nuttiness, some red apples, a little bit of tart and savory citrus fruit character and a hint of chalky minerality.
A very predictable, one-dimensional and understated Champagne with a restrained and linear character. Nice freshness but that's about it. Offers very little of anything of interest. Overpriced at 46,90€.

This has many of the aspects of a fine Champagne, clear, pale color, small, even bubbles, bright acids, so why don't I like it more? The nose displays notes of crushed rock, brioche and stone fruit, the palate is a well balanced profile of citrus, yeast, toast and mineral flavors but there's a deep flavor of something like yeast, but with a bit more funk to it that just puts me slightly off. I enjoy drinking it, but it's not fantastic, in my opinion.

Consumed with fish roe. On the nose very linear with lemon zest and hints of toast. On palate, citrus driven with nice tones of Meyer lemon, tangerine, green apple and hints of toast. Racy energetic finish. I think a couple of years of bottle age will help this a lot but it is a great match for seafood and oysters.

The NV Bruno Paillard Champagne Brut Premiere Cuvée is medium (-) yellow in colour with rather fine bubbles. The slightly oxidative nose opens up to pine nuts, walnuts, ash, orange peels, apricots and ripe melons. On the palate, an initial burst of fruit flavours such as lime skin, lemon peels, passionfruit and apricots before progressing to a palate profile of ashes and pine nuts. There's also a noticeable underlying acidity.
Good drive before ending with a burst of lemon squash. Good acidity with refreshing clean cut and crisp, medium-length finish. Pretty low dosage at 6g per litre of sugar.

Grower Champagne for Third Thursday (Willamette Wine Storage): The nose is interesting, showing a touch of somethings savory wrapped in a pie crust and some lemon/lime scents. The lemons and limes roll in fully on the palate, and sweetness shows itself on the mid palate. A bit of nutmeg is noticeable on the finish. The acid is on the lighter side for me.

While this bottle display similar oxidative note of honey and toasted bread, nuttiness, this is fresher and more complex than the 1st bottle with brown sugar, lentil, red apple, focus and perfume, especially the brown sugar aromas that's really attractive. The acid has rounded up and the sweet green and red apple, sweet lemon giving it a great balance and the light spiciness added complexity to it, this bottle show that this cuvee will need at least 5-7yrs to mature and develop better harmonious. The mineral infused long finished with good weight and brown sugar aftertaste with freshness. I pretty like and lover of oxidative style Champagne will find this enticing too.

The bouquet is more developed and matured compared to the bottle that degorged in Mar-2011, quite oxidative that display lots of nuttiness and honey in the core accompany by yellow flower, orange, pear as well as metalic minerality, this is a different beauty if you like your Champagne oxidative. However, deep inside the aromas there is hint of TCA and the palate re-assure me that this was a cork bottle, no fruits and disjointed with TCA. A pity....

This is notably sweeter, fruitier and slightly sharper with gripping acidity compared to the BDB that glide through the palate with light saline mineral, citrus flavors that linger on the long, powerful finish. Not bad but I prefer the BDB as it is more precise and detail.

IMW Annual Champagne Tasting (Christie's Auction House, NYC): restrained palate shows earth and putty. not a tremendous amount of flavor, though there is a medium length finish that begins to come together.

The back label noted (clearly and unmistakably - no silly codes to decipher) that this bottle was disgorged June 2005. How refreshing.
nose: sweet apple, mineral, dust, bit of spice
palate: pear and lemon were finely laced with ginger. Quite nice, though the midpalate could be described as watery, and the finish wasn't wholly complete, lacking in body and shorter than I'd like. Bubbles were frenetic, though. I would drink this again, though I suspect that a more recent disgorgement might have fuller fruit. Certainly good stuff.

From Magnum: Served at just below room temperature. Straw gold in color with a very active beading. Green apple and yeast with a sharp and structured mineral foundation and acidity. Not complex but very enjoyable. Medium finish. The overall balance and integration of this wine showed noticeably better with the larger format than I've tasted of this wine from .750ml.

Very good, but lacking in consistency. Light golden color. Vigorous mousse. Medium-sized bubbles. It’s hard to believe this was the same wine that I raved about last year. Astringent apple nose. Crisp apple flavors with almonds and lots of citrus in the mouth. Far too acidic this time, lacking all the balance and elegance I remember. Medium-short finish. Don’t get me wrong – this is still a lovely Champagne, it’s simply not that consistent. Tasted from a 375ml half-bottle.

Fantastic! My first experience with the house of Bruno Paillard – and it will certainly not be my last. This is an incredibly elegant Champagne that I would consider a great choice not just as an aperitif but also as an accompaniment to many dishes. Light golden color with plenty of fine bubbles. Toasty nose with a hint of citrus, but otherwise closed. Multifaceted and evolving palate. Initial flavors of almond bread and apple are followed with hints of cherry and darker fruit. Has an amazing balance of both richness and elegance. Medium-length buttery finish. Very good value. An excellent Champange that I’m now very pleased to know.

This was a terrific discovery for me. A split around $20 which would be a highly enjoyable sipper but also might pair nicely with food. Definite Apple-Pear notes on the nose with a foamy, creamy cherry/strawberry quality and I thought just a slight hint of citrus. Very nice subtle acidity. I thought the finish quite short, though I see Parker said it was long... perhaps my taste buds cut out early. Delicious and probably one of the two wines I will seek out and buy from this evening.

Tignanello Vertical Tasting and Dinner (Establishment Restaurant, Manchester): Initially, there is a real yeasty-white peppery blast on the nose that almost takes your breath away, but it settles down nicely. A light, white bread, fresh nose. Light and very crisp on the palate with fresh green flavours. This could probably do with a bit more bottle age as it feels a bit too green, acidic and a touch tooth-stripping. Very prickly in the mouth. Very Good/Very Good Indeed.
